Life. It’s been busy lately, and a little stressful I might add. I won’t bore you with the details, but let’s just say some comfort food is in order for the weekend ahead, as well as a cocktail or two.
I’ll definitely be making one of my favorite cocktails, the Sauvignon Sunset, and serving it alongside a warm bowl of our favorite Cheesy Sausage Rotel Dip.

You can cook this on the stovetop in a saucepan, add it to a small slow cooker or to make things super quick and simple you can add all the ingredients to a microwavable bowl and microwave it for instant satisfaction.
Ingredients You’ll Need
- bulk pork breakfast sausage
- Velveeta
- can Rotel diced tomatoes and green chiles
- Hidden Valley Ranch Spicy Seasoning
My sister Carolyn made this dip for the Super Bowl this past year and Tom could not stop eating it. Tom loves things spicy so this cheesy dip made with Velveeta, sausage, Rotel tomatoes with green chiles and for that bold, zesty kick, some spicy ranch seasoning.
I use two tablespoons of the seasoning from the shaker. If you find the single packets of the seasoning, just measure out two tablespoons. If you like things spicier, taste the mixture first with the two tablespoons, and then add more if desired.
Step-By-Step Instructions
The first step is to cook your sausage. You’ll add the bulk sausage to a medium nonstick saucepan over medium-high heat and cook, breaking up with a spatula, until it’s no longer pink. Then you’ll drain off the excess grease.
The second step is to add your cubed Velveeta, your undrained Rotel tomatoes and green chiles and your spicy ranch seasoning. You’ll cook the mixture over low heat stirring often until the cheese is melted and smooth.
You can also opt to add the sausage and remaining ingredients to a slow cooker like I did. If you’re using a slow cooker, you’ll cook on low for two hours or high for about an hour. You’ll want the cheese to be totally melted and smooth.
This is an appy I make often, especially when I’m looking for a super easy recipe to serve on game day. It’s great for all your summer parties too.

I love serving it in my mini crockpot because it stays nice and warm. You can serve the dip with tortilla chips, crackers, fresh cut veggies or whatever you enjoy for dipping.

I use bulk breakfast sausage for this recipe. You’ll need 8 ounces. You can use the remainder later scrambled into your breakfast eggs.
If you plan on using a small slow cooker, add all your ingredients and cook until the mixture is totally melted and smooth.
