Ingredients

  • 8 oz. bulk pork breakfast sausage
  • 1 lb. Velveeta, cut into small cubes
  • 1 10-oz. can Rotel tomatoes with Green Chiles
  • 2 Tbsp. Hidden Valley Ranch Spicy Ranch Seasoning
  • crackers, tortilla chips, fresh cut veggies, for serving

Instructions

  • Add the bulk sausage to a medium nonstick saucepan over medium-high heat and cook, breaking up with a spatula, until it's no longer pink. Then you'll drain off the excess grease.
  • Add your cubed Velveeta, your undrained Rotel tomatoes and green chiles and your spicy ranch seasoning. You'll cook the mixture over low heat stirring often until the cheese is melted and smooth.
You can also opt to add the sausage and remaining ingredients to a slow cooker like I did. If you're using a slow cooker, you'll cook on low for two hours or high for about an hour. You'll want the cheese to be totally melted and smooth.
