I make this dip for game day parties, as a special treat for our regular Taco Tuesday dinners and always for our Cinco de Mayo party!

Step-By-Step Instructions
The first step is to cook your chorizo in a large skillet over medium-high heat until no longer pink, breaking up with a spatula as the meat cooks. You’ll remove from the skillet with slotted spoon and set aside.
The second step is to beat your cream cheese until smooth. Next up, you’ll add the chorizo, freshly shredded cheese, green chiles, mayo, roasted red peppers and spices until combined. Spread the mixture in a baking dish and bake for 20-25 until bubbly.ย
I love this recipe because of the minimal ingredients and the fact that I can make it even last minute when I’m pressed for time but need an extra little appy I know everyone will enjoy.

A Few Cookโs Notes for Cheesy Mexican Chorizo Dip
This dip tastes delicious without the chorizo too, if you have vegetarian guests.
You can make the dip ahead of time, keep it in the fridge, and then just pop it in the oven when you’re ready.
I love to serve this dip with tortilla chips, but you could also serve it with fresh veggies.

Cheesy Mexican Chorizo Dip

I was a huge basketball fan when I was younger, but I’ll be honest, now I’m just into March Madness for the food! ;) But really, I’m into most everything if it involves food. LOL!
