Hey guys! How’s your week been goin’? It’s been crazy and long on my end. But the weekend’s almost in sight, so it’s time to think of something easy peasy to satisfy our appetites AND still leave us some relaxation time from the work week craziness.
Let me introduce you to this easy, delicious, refreshingly healthy little number that you’ll want to put on anything and everything.
This Avocado and Tomato Salsa is terrifically tasty on it’s own, as a side for tortilla chips, or as a topping for a fresh piece of grilled chicken or fish.

I don’t know about you folks, but when I make something with ingredients fresh from a local farm stand it tastes so much better.
Avocados are rich in healthy fats, fiber and nutrients like potassium and folate.
Ingredients You’ll Need
- avocados
- grape tomatoes (or cherry)
- English cucumber
- red onion
- jalapeño
- garlic
- fresh cilantro
- lime
- olive oil
- coarse kosher salt and pepper
Step-By-Step Instructions
This recipe is literally one step.
You’ll chop all your veggies and then add all your ingredients to a large serving bowl and toss gently until well combined.
I mean things don’t get much easier or healthier, am I right?
I wouldn’t be lying if I said I’ve eaten my body weight in this salsa over the last few weeks. And I’ve had it all to myself. You know Mr. Picky won’t be trying it, because #1 it’s healthy, and #2 it’s loaded with all kinds of scary veggies! Fine with me. I’ll take it all!

A Few Cook’s Notes for Avocado and Tomato Salsa
I use grape tomatoes for this recipe, but you can use cherry tomatoes or larger tomatoes and then just chop them.
I use an English cucumber because there are few, if any seeds.
The amount of lime juice was about 2-3 tablespoons. Adjust to your own taste.

- 3 avocados, halved, pitted and chopped
- 1 pint grape tomatoes, quartered
- 1 cup English cucumber, chopped
- 1/2 cup red onion, finely chopped
- 1 large jalapeno, seeded and finely chopped
- 2 cloves garlic, finely minced
- 1/4 cup cilantro leaves, finely chopped
- juice of one lime, about 2-3 tablespoons
- 2 Tbsp. olive oil
- 1 tsp. coarse kosher salt

I eat this every day over toast for breakfast in the summer, Mary Ann. It is sooo good! I don’t usually put in jalapeno but add a pinch of red pepper flakes instead. Lots of lime and cilantro make this dish! Have a great weekend!
