Where’s the weekend when you need it???
Hey guys! How’s your week been goin’? It’s been crazy and long on my end.
But the weekend’s almost in sight, so it’s time to think of something easy peasy to satisfy our appetites AND still leave us some relaxation time from the work week craziness.
Let me introduce you to this easy, delicious, refreshingly healthy little number that you’ll want to put on anything and everything.
This Avocado and Tomato Salsa is terrifically tasty on it’s own, as a side for tortilla chips, or as a topping for a fresh piece of grilled chicken or fish.
I wouldn’t be lying if I said I’ve eaten my body weight in this salsa over the last few weeks. And I’ve had it all to myself. You know Mr. Picky won’t be trying it, because #1 it’s healthy, and #2 it’s loaded with all kinds of scary veggies! Fine with me. I’ll take it all!
It literally takes only minutes and a handful of ingredients to make. Juicy grape tomatoes, avocados, jalapeno, red onion, cucumber, fresh cilantro, lime juice, a bit of olive oil and salt and pepper.
Sounds refreshing doesn’t it?
A Few Cook’s Notes for Avocado and Tomato Salsa Recipe:
I use grape tomatoes for this recipe, but you can use cherry tomatoes or larger tomatoes and then just chop them.
I use an English cucumber because there are few, if any seeds.
I used the juice of a whole lime, which was about 2-3 tablespoons. Adjust to your own taste.
So grab your veggies from the market (or perhaps your brother-in-law’s garden…wink, wink), and let’s get this party started! Enjoy!

- 3 avocados, halved, pitted and chopped
- 1 pint grape tomatoes, quartered
- 1 cup English cucumber, chopped
- 1/2 cup red onion, finely chopped
- 1 large jalapeno, seeded and finely chopped
- 2 cloves garlic, minced
- 1/4 cup cilantro leaves, finely chopped
- juice of one lime, about 2-3 tablespoons
- 2 Tbsp. olive oil
- 1 tsp. Kosher salt
- 1/4 tsp. freshly ground black pepper
Instructions
- Add all ingredients to a medium bowl. Toss until well combined.

I eat this every day over toast for breakfast in the summer, Mary Ann. It is sooo good! I don’t usually put in jalapeno but add a pinch of red pepper flakes instead. Lots of lime and cilantro make this dish! Have a great weekend!
