A healthy appetizer, side or topping for your main dish, this Avocado Tomato Salsa is summery and refreshing!
Where’s the weekend when you need it???
Hey guys! How’s your week been goin’? It’s been crazy and long on my end.
But the weekend’s almost in sight, so it’s time to think of something easy peasy to satisfy our appetites AND still leave us some relaxation time from the work week craziness.
Let me introduce you to this easy, delicious, refreshingly healthy little number that you’ll want to put on anything and everything.
This Avocado and Tomato Salsa is terrifically tasty on it’s own, as a side for tortilla chips, or as a topping for a fresh piece of grilled chicken or fish.
I wouldn’t be lying if I said I’ve eaten my body weight in this salsa over the last few weeks. And I’ve had it all to myself. You know Mr. Picky won’t be trying it, because #1 it’s healthy, and #2 it’s loaded with all kinds of scary veggies! Fine with me. I’ll take it all!
It literally takes only minutes and a handful of ingredients to make. Juicy grape tomatoes, avocados, jalapeno, red onion, cucumber, fresh cilantro, lime juice, a bit of olive oil and salt and pepper.
Sounds refreshing doesn’t it?
A Few Cook’s Notes for Avocado and Tomato Salsa Recipe:
I use grape tomatoes for this recipe, but you can use cherry tomatoes or larger tomatoes and then just chop them.
I use an English cucumber because there are few, if any seeds.
I used the juice of a whole lime, which was about 2-3 tablespoons. Adjust to your own taste.
So grab your veggies from the market (or perhaps your brother-in-law’s garden…wink, wink), and let’s get this party started! Enjoy!

I feel like every day during summer should be the weekend, right!? Who do we need to talk to, and how do we make the summer just one long continuous weekend?! Oh wait, I think that’s called retirement? Dang it! ;) Anyways, I am LOVING this salsa, Mare! Fun fact, I’m a weird salsa addict. Like, I’m obsessed with every kind of salsa and I feel it’s my duty to try every single salsa on planet earth. Needless to say, this beauty just made its way to the TOP of my list! This would be delicious on ALL the things… or just eaten straight from the serving bowl with a shovel. Either way = WIN WIN! Pinning! Cheers!
