Ingredients

  • 3 avocados, halved, pitted and chopped
  • 1 pint grape tomatoes, quartered
  • 1 cup English cucumber, chopped
  • 1/2 cup red onion, finely chopped
  • 1 large jalapeno, seeded and finely chopped
  • 2 cloves garlic, finely minced
  • 1/4 cup cilantro leaves, finely chopped
  • juice of one lime, about 2-3 tablespoons
  • 2 Tbsp. olive oil
  • 1 tsp. coarse kosher salt
  • 1/4 tsp. freshly ground black pepper

Instructions

  • Add all ingredients to a large serving bowl and toss gently until well combined. Serve immediately.

Notes

I use grape tomatoes for this recipe, but you can use cherry tomatoes or larger tomatoes and then just chop them.
I use an English cucumber because there are few, if any seeds.
The amount of lime juice was about 2-3 tablespoons. Adjust to your own taste.
