Who doesn’t love a good slider??? They’re perfect for lunch, snacking, dinner and most of all, GAME DAY!
These Roast Beef Sliders with Caramelized Onions and Horseradish Sauce are over-the-top DELISH!
It’s funny, because when I first told Mr. Picky I was thinking of a new slider recipe for the blog and mentioned roast beef, he said “I don’t think I’d like that”. I mean really??
Well did he change his tune once he tried one. He absolutely LOVES these sliders! I knew from the get-go I’d love them because I’m a huge fan of each and every ingredient included. And y’all know how much I love game days!
Why You’ll Love this Recipe
Sliders are the best kind of finger food for game days. Twelve little sammies, no silverware needed. Just grab and go.
This flavor combo is absolutely delicious! Provolone cheese and deli roast beef sliced thin is melt in your mouth tender. The caramelized onions are cooked until they’re deep brown and jammy. The horseradish sauce is only two ingredients and it just goes swimmingly as the sauce for these sliders. And the melted butter topping with a smidge of Dijon mustard and Worcestershire sauce add just the right touch.
Ingredients You’ll Need
- olive oil
- butter
- yellow onions
- coarse kosher salt and pepper
- Worcestershire sauce
- hawaiian rolls
- deli roast beef
- provolone cheese
- mayonnaise
- hporseradish
- Dijon mustard
- sesame seeds
- poppy seeds
Step-By-Step Instructions
The first step will be to get your onions cooking. In a large deep skillet, melt butter along with your olive oil over medium-low heat. Add onions and cook until caramelized, stirring occasionally, for about 35-40 minutes. Add kosher salt and pepper and Worcestershire sauce and stir until well combined. Then remove the onions from the heat.
The second step will be to make your horseradish sauce and prepare you rolls. In a small bowl, mix together your mayo and horseradish until well combined.
Using a large knife, slice the rolls in half so you have a portion of tops and a portion of bottoms. You want both portions of the rolls to remain connected, so there are two slabs. Spread both halves with your horseradish sauce. Place the bottom portion in your prepared pan.
The third step will be to top the bottom half with six slices of your provolone cheese.
The fourth step will be to top the cheese evenly with your roast beef slices.
The fifth step will be to top the roast beef with your caramelized onions.
The sixth step will be to top the caramelized onions with six more slices of provolone cheese and then top with your buns.
The final step will be to make you’re butter topping. You’ll melt your butter and whisk in your Dijon mustard and Worcestershire sauce. You’ll brush the top of the buns with your butter mixture, getting in all the nooks and crannies.
It may seem like you have too much butter, but you want the extra butter to seep down to the bottom of the buns so you get a nice buttery bottom to your rolls. Sprinkle the buns with your sesame and poppy seeds before covering the sliders with foil and baking for 20-25 until the cheese is melted. You’ll remove the foil and continue to cook for 5 minutes or until lightly browned on top. Cut into individual sliders and serve immediately.
I know you guys are going to love these! You need to get them on your game day menu or serve them as a side to a nice pot of soup this fall!

A Few Cook’s Notes for Roast Beef Sliders with Caramelized Onions and Horseradish Sauce
Ask the person at the deli counter to slice your roast beef nice and thin for these sliders.
I like provolone for these sammies, but you could also use cheddar, swiss or whatever cheese is your fave.
When you slice your hawaiian rolls, make sure to slice them in half horizontally without separating them.
