This Chicken Strawberry Avocado Pasta Salad with Creamy Poppy Seed Dressing is the perfect summer salad. It’s savory with just a hint of sweetness that will tickle your taste buds all summer long!
Updated: This post was first published here in February 2019. I decided it was worthy of a re-share because it’s a popular recipe here at the BHK and just perfect for all those gorgeous summer strawberries. I’ve updated the content and added some notes to the post below.
Hello folks! Did y’all enjoy your weekend?]
School over for the kiddos yet? If not yet, hopefully very soon!
Today I’m sharing a FANTASTIC salad that’s loaded with sweet and savory flavors.
This Chicken Strawberry Avocado Pasta Salad with Creamy Poppy Seed Dressing is sure to tickle your taste buds all summer long!
I’m so excited about this salad because it’s SUPER delicious, high on flavor and texture, yet low on effort. It also looks beautiful when served.
Honestly, there’s so much to love about it. It’s like green salad meets pasta salad. And it’s already neighbor approved, so I know you’re going to enjoy it too!
Chicken Strawberry Avocado Pasta Salad Ingredients
- spring mix
- pasta
- shredded rotisserie chicken
- strawberries
- avocados
- glazed walnuts or pecans
- Cotija cheese
Poppy Seed Dressing Ingredients
- olive oil
- red wine vinegar
- honey
- shallots
- poppy seeds
- Dijon mustard
- mayonnaise
- salt and pepper
I add some already shredded rotisserie chicken to this salad which makes it even easier. And I love adding the glazed nuts to this salad. You can usually find them at the market in the aisle with the salad dressings or the baking aisle in the nuts section. They’re crunchy, sweet and make this salad even more satisfying.
This salad is also packed with spring mix, pasta, fresh juicy strawberries, avocado and salty, sharp Cotija cheese all tossed in a creamy poppy seed dressing. Sounds delicious, right?!
All the ingredients work swimmingly together and make this salad a delicious option for a fabulous lunch or dinner. No one will be leaving the table hungry! It’ll leave you feeling satisfied and craving for more!
Please let me know if you give the recipe a try. And if you have any questions about the recipe, just drop a comment below. Enjoy!
A Few Cook’s Notes for Chicken Strawberry Avocado Pasta Salad with Creamy Poppy Seed Dressing Recipe
To make the poppy seed dressing a bit creamier, I added a few teaspoons of mayonnaise. If you want to save calories, you can omit the mayo.
I also did not overdue the honey in the dressing, but if you enjoy yours sweeter then just add a smidge more.
This salad tastes delicious with the Cotija cheese, but it also works well with feta if you’d prefer.
I used a medium sized elbow type pasta, but feel free to use penne, small bowties or shells.
This salad is delicious with either glazed pecan, walnuts or even almonds.
