This salad is a healthy little number that’s jam-packed with flavor and crunch that you’re going to want to add to your weekly lunch or dinner menu.

If you’re a chick pea lover like I am, you’re going to love this salad.
Besides salt and pepper, you only need three four ingredients for the dressing and only five ingredients for the salad. So less than 10 ingredients total and just about 15 minutes or so to throw it all together. Doesn’t get much easier.

- red wine vinegar
- Dijon mustard
- grated Parmesan cheese

- iceberg lettuce
- romaine lettuce
- canned chick peas
- Italian salami

Who created the La Scala Chopped Salad?
The salad was created in the 1950s by Chef Jean Leon at La Scala Boutique in Beverly Hills, California. It gained even more popularity over the last few years because it’s a favorite salad of a few Hollywood celebrities including the Kardashians.
Step-by-Step Instructions
First you can whip up your dressing by whisking together your olive oil, red wine vinegar, Dijon mustard, grated Parmesan and salt and pepper.
Next, it’s time to chop both lettuces and then add them to a large bowl.
You’ll drain and rinse your chick peas and add them to your bowl with the greens.
Julienne your Italian salami and shred your mozzarella cheese (if you didn’t grab a bag of pre-shredded) and add both to the bowl.
Toss everything with the desired amount of dressing and serve.
I’m no celebrity, but I also really enjoy this salad. It’s super crunchy and I love the added chick peas and salami, as well as the red wine Dijon vinaigrette. I serve it with crusty bread and a glass of wine as my dinner or as is if I’m enjoying it for lunch.
If you plan on eating just a portion of it, don’t dress the entire salad. Just dress whatever portion you want to eat, so it doesn’t get soggy.

A Few Cook’s Notes for La Scala Chopped Salad
I’ve also seen this salad with added cucumber or artichoke hearts.
As I mentioned above, if you don’t plan to eat the entire salad in one sitting don’t dress the entire salad. Just dress whatever portion you want to eat, so it doesn’t get soggy.
