La Scala Chopped Salad

Ingredients

Dressing

  • 1/3 cup olive oil
  • 3 Tbsp. red wine vinegar
  • 1 1/2 tsp. Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Salad

  • 1 15-oz. can chick peas, drained and rinsed
  • 1 head iceberg lettuce, finely chopped
  • 1 head romaine lettuce, finely chopped
  • 1/4 lb. Italian salami, julienned
  • 1 cup shredded mozzarella cheese

Instructions

Dressing

  • Combine all dressing ingredients in a jar or small bowl and whisk together. Set aside.

Salad

  • Combine all salad ingredients in a large bowl. Toss with desired amount of dressing and serve immediately.

Notes

I've also seen this salad with added cucumber or artichoke hearts.
As I mentioned above, if you don't plan to eat the entire salad in one sitting don't dress the entire salad. Just dress whatever portion you want to eat, so it doesn't get soggy.
