Hello friends. Hope everyone had a wonderful Valentine’s Day. We celebrated at home with a delicious meal, my Pan Seared Scallops with Orzo Piccata, Tom’s fave, followed by a few of my favorite Canadian Butter Tarts!
Today, I’ve got a super duper easy dinner that the whole family is guaranteed to enjoy, and the meatballs are made with ground chicken instead of beef, so they’re a bit healthier too. I’ve opted to share the recipe using a jarred marinara sauce, but if you prefer to make some homemade, have at it and use my recipe here for the homemade version.

This is one of those quick meals for those nights when you’re really busy but still want to serve a dinner that’s got lots of flavor with fresh healthy ingredients that the family will love.
These meatballs are perfect served over pasta or added to a hoagie roll for a chicken parm sammie.
My recipe uses ground chicken instead of ground beef, so it’s a healthier option.
I also use a jarred sauce to cut down on prep time.
Ingredients You’ll Need
- ground chicken
- egg
- garlic
- olive oil
- seasoned panko crumbs
- grated Parmesan cheese
- Italian seasoning
- onion powder
- kosher salt and pepper
- marinara sauce (homemade or jarred)
- shredded mozzarella cheese
I’ve made this recipe with my homemade marinara, but there have been plenty of nights when I just grab a jarred marinara sauce because I’m tight for time. If you use a good quality sauce, it’ll be just as delicious.
My recipe makes roughly 20 meatballs if you use a 1 1/2-inch scoop to scoop your meatballs. If you’ve got a bigger crowd, just double the recipe. I know how it is when meatballs are served at our house. They go quick, so I often double the recipe and if I have extra we enjoy them as leftovers or I freeze in an airtight container for another time.
Step-By-Step Instructions
The first step is to combine all ingredients for meatballs and gently mix together in a large bowl making sure not to overmix.
You will use a 1 1/2-inch scooper and scoop meatballs onto trays.
You’ll bake the meatballs at 400 degrees for about 15 minutes until lightly browned and no longer pink inside.
Add the meatballs to a large deep oven-proof skillet and pour the marinara sauce over the meatballs and mix until the meatballs are well coated. Sprinkle the top of the meatballs with your shredded mozzarella.
Transfer the skillet to the oven and cook for about 10 minutes until the meatballs are heated through and the sauce is bubbly. Serve over pasta or on a hoagie roll as a sandwich.

A Few Cook’s Notes for Chicken Parmesan Meatballs
As I mentioned above, feel free to make my homemade marinara, linked above, or use your favorite jarred sauce.
If you’d like to enjoy the meatballs on a sandwich, you could add the sauce to the skillet until the sauce and meatballs are heated through. Then add your meatballs to a hoagie roll and top with your shredded mozzarella. I would add the sandwiches to a large baking sheet and then place in the oven until the cheese is melted. You could also use the broiler to melt the cheese, just keep a close eye on the sammies so they don’t burn.
