One more day until the weekend! I’m counting the minutes my friends.
This week has been one of those weeks. I’ve packed so much in already, I feel like my brain could burst. I’ve been researching, recipe testing, photographing, tweeting and pinning…and believe you me, that’s one thing too many! So this weekend, I’ll be enjoying some Sauvignon Sunsets, putting my feet up and just plain relaxing!
The one thing I’ll be whipping up for happy hour will be this Cheesy Corn Dip with Green Chiles. It’s one of our favorite summer appetizers. My guests here at the beach always give it the big thumbs up!
I’m warning you, it’s addictive.
Why You’ll Love this Recipe
It’s creamy and cheesy and loaded with white and yellow corn, and green chiles. I use shredded jalapeno jack cheese for added spice, but feel free to use plain Monterey jack if you like. You can make this hot dip with canned corn or fresh from the cob.
This is the perfect time of year to make this dip because fresh corn is abundant and it’s so sweet and delicious.
And who can pass up a cheesy dip??
Ingredients You’ll Need
- cream cheese
- sour cream
- white corn (fresh or canned)
- yellow corn (fresh or canned)
- green chiles
- original Mrs. Dash
- cayenne pepper
- shredded jalapeno Jack cheese
- shredded yellow cheddar cheese
Step-By-Step Instructions
The first step is combine cream cheese and sour cream until smooth.
The second step is to add the corn, chiles, Mrs. Dash, cayenne pepper and 1 3/4 cups shredded cheese until well blended.
The third step is to pour the mixture into a deep dish pie plate or a baking dish large enough to hold mixture. Sprinkle top with remaining cheese.
The final step is to bake for 20 minutes, until bubbly and lightly browned on top.

A Few Cook’s Notes for Cheesy Corn Dip with Green Chiles
You can use either fresh corn cut from the cob or canned corn for this recipe.
I like to use both white and yellow corn, but one or the other will also work fine.
Always shred the cheese yourself instead of using the packaged shredded cheese because it melts more smoothly when you shred it yourself.

- 8 oz. cream cheese, softened
- 1 cup sour cream
