This refreshing Blueberry Kiwi Mojito is the perfect cocktail to celebrate the new summer season!

The holiday weekend is finally here friends! It’s time to toast the unofficial start of Summer 2017!
Any plans for the holiday weekend guys? Big parties? BBQ’s? Me? I’ll be relaxing at the beach, with one of my favorite cocktails in hand, today’s Blueberry Kiwi Mojito. Is there any better way?! I’ll also be enjoying something mouthwatering right off the BBQ along with my Gram’s Easy Macaroni Salad, some Baked Three Bean Casserole, and either my Creamy, Dreamy Peanut Butter Pie or my Berry Cobbler with Sweet Biscuit Topping. Decisions, decisions!
My friends at Powell & Mahoney have made making my favorite cocktail even easier with their new cans of Sparkling Mojito. They were nice enough to send me a few cans from their first batch. (One of the fabulous perks of being a food blogger!) They should be available on their website shortly and popping up in a store near you this summer! They’ve got four delicious flavors…Sparkling Mojito, Sparkling Tonic, Ginger Beer and Blood Orange Ginger Beer. You need to get your hands on some! It makes craft cocktailing at home so deliciously easy!
Just in case you missed my Watermelon Mint Margarita for Cinco de Mayo, let me get you up to speed on Powell & Mahoney. Their mixers are made with natural ingredients, hand-selected juices, pure cane sugar and agave and no artificial flavors or preservatives. And they’re gluten free!
For this Blueberry Kiwi Mojito, simply muddle your blueberries, kiwi slices and mint leaves in a cocktail shaker. Add the juice of one lime wedge, your light rum and some ice, then shake it up and strain into an ice filled cocktail glass. Top it off with your P & M Sparkling Mojito and garnish with some extra blueberries, kiwi slices and a sprig of mint. Then get ready to par-tay friends!

Ingredients
- 1/4 cup fresh blueberries
- 3-4 thin slices peeled kiwi
- 3 mint leaves
- juice of one lime wedge
- 1.5 oz. light rum
- 4 oz. Powell & Mahoney Sparkling Mojito
- Garnish - extra blueberries slice or two of kiwi, a few mint leaves
Instructions
- Muddle your blueberries, kiwi slices and mint leaves in a cocktail shaker.
- Add the juice of one lime wedge, light rum and some ice, then give it a couple of vigorous shakes.
- Strain into an ice filled cocktail glass. Top it off with your P & M Sparkling Mojito. Stir.
- Garnish with some extra blueberries and kiwi slices and a sprig of mint if desired.
- Enjoy.
I can’t wait for the weekend with this cocktail in hand. I have never seen these cocktail mixers but what a great idea and mojitos are my favorite.
