The weather’s heating up folks! That calls for a delicious no-bake dessert! These Scotcheroos hit the spot! They’re a classic treat that kids and adults alike can’t resist!
Wow! Summer isn’t over yet guys! Temps were in the 90’s this past week in our neck of the woods. The humidity was horrendous! It’s time to swicth off that oven and whip up a no-bake treat!
Who’s a scotcheroos fan?
What is a Scotcheroo?
Scotcheroos are no-bake dessert bars made with crispy rice cereal, peanut butter, sugar, corn syrup, chocolate and butterscotch.
They’re crispy and chewy and the chocolate butterscotch topping is deadly delicious! Beyond addictive. Take it from one who knows.
Scotcheroos Ingredients
- Rice Krispie cereal
- peanut butter
- granulated sugar
- corn syrup
- chocolate chips
- butterscotch chips
They take just about 15 minutes to make, but you’ll need to let the bars set for an hour or two before slicing them up. I know. Bummer. But they’re so worth it.
These are great for dessert, snacking and as that special lunch box treat for the kiddos this school season! Enjoy!
A Few Cook’s Notes for Scotcheroos
When making scotcheroos it’s best to have all your ingredients measured out and ready to go. The peanut butter/sugar/corn syrup mixture can harden up pretty quickly, so it’s best to work fast.
The bars will keep in an airtight container for a few days, that is if they last that long.
These are made in a 9×13 pan and I cut mine into roughly 20 squares.
I opted to sprinkle mine with a bit of Maldon sea salt flakes.

- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 cup peanut butter
- 6 cups RIce Krispies cereal
- 1 cup semi-sweet chocolate morsels
- 1 cup butterscotch chips
Instructions
- Line a 9x13 pan with parchment paper. Spray the parchment with non-stick cooking spray. Set aside. Place the Rice Krispies in a large bowl. Set aside.Add corn syrup and granulated sugar to a medium saucepan and cook over medium heat, stirring frequently, until sugar dissolves. Bring the mixture to a boil. Remove from heat. Quickly stir in the peanut butter. Mix well. Pour the mixture over the Rice Krispies cereal. Stir until well coated. Press the mixture into the prepared pan.
- Melt the chocolate and butterscotch chips together in a microwave safe bowl in 30-second internvals until smooth. Spread evenly over cereal mixture. Let stand until firm, about 1-2 hours. Sprinkle with Maldon sea salt flakes, if desired. Cut into squares.

How have I missed out on these delicious treats for the past 4+ decades!? Rice crispy treats were one of my favorite childhood treats so I know I’d love these!
