I don’t know about you folks, but I hate waste. I’m always foraging through my fridge, grabbing any leftovers I find and whipping all kinds of things. Some recipes turn out, others need work, I’m not gonna lie.
This Italian Sausage Pasta Frittata is spot on delicious.
I had some leftover penne pasta, some grape tomatoes and some fresh basil from a friend’s garden and decided that combined with some Italian sausage I’d have a tasty pasta frittata that Tom and I would both enjoy.

Ingredients You’ll Need
- olive oil
- sweet Italian sausage
- marinara sauce
- leftover cooked penne pasta
- large eggs
- heavy whipping cream
- kosher salt and pepper
- grated Parmesan cheese
- fresh mozzarella
- grape or cherry tomatoes
- fresh basil leaves
I bet you guys have heard of a regular frittata, but maybe not a pasta frittata. A regular frittata uses veggies on the bottom. With a pasta frittata you’re obviously using pasta, hence the name.
Step-By-Step Instructions
The first step is to add your olive oil to a skillet and cook your Italian sausage, crumbling with a wooden spoon, until cooked until no longer pink. You’ll remove it from the skillet with a slotted spoon to a plate and set aside.
The second step is to whisk together your eggs, heavy cream, grated Parmesan and salt and pepper followed by your fresh mozzarella.
The next step will be to add your pasta and Italian sausage to a deep oven-safe skillet or a deep cast iron skillet over medium-high heat. Then you’ll add your marinara sauce and toss until everything is well coated and cook for a minute or two.
At this point, you’ll pour your egg mixture into your pan and cook for 3-4 minutes until the bottom and sides start to set.
The last step is to top with your grape tomato halves and bake. You’ll want to bake until the frittata is completely set and the cheese is melted, roughly 10-15 minutes.
You can sprinkle the frittata with the fresh basil and cut the it into wedges. It’s delicious served with a glass of wine and a slice of crusty bread.

A Few Cook’s Notes for Italian Sausage Pasta Frittata
I used penne pasta because that’s what I had leftover in my fridge and I used roughly 4 cups. You can substitute spaghetti or fettuccine if you have that. Just make sure you have 4 cups cooked pasta.
If you don’t have any leftover pasta but still want to try the recipe, just cook some pasta.

- 1 Tbsp. olive oil
- 8 oz. bulk sweet Italian sausage
- 6 large eggs
- 1/4 cup heavy cream
- 1/2 cup grated Parmesan cheese

- With a wire rack positioned in the middle of the oven, preheat oven to 375 degrees.
- Add olive oil to a large skillet over medium-high heat. Add Italian sausage and cook until no longer pink, breaking up with a wooden spoon. Remove from skillet with a slotted spoon to a plate. Set aside.
- In a medium bowl, whisk together your eggs, heavy cream, grated Parmesan and salt and pepper until well combined. Add your fresh mozzarella. Set aside.
- Add your pasta and Italian sausage to a deep oven-safe skillet or a deep cast iron skillet over medium-high heat. Then you'll add your marinara sauce and toss until everything is well coated and cook for a minute or two.
