These Buffalo Cauliflower Patties are zesty, low-carb and so easy to make. A delicious option for lunch or as a snack and perfect served as is or topped with some blue cheese dressing.
Anyone overindulge over the holiday weekend besides me?
It’s so hard to say NO when all that fabulous cookout food is staring me right in the face. There’s just nothing better than a good old juicy grilled burger or hot dog dog with a side of Gram’s Easy Macaroni Salad and some of my Mom’s Baked Three Bean Casserole.
And while we’re at it, let’s not forget dessert. Everyone enjoyed my Fresh Berry Tart and some delicious S’mores Bars I made courtesy of my friend Sally from Sally’s Baking Addiction.
So today, we’re heading straight down healthy street with these beyond easy, tangy and tasty Buffalo Cauliflower Patties. I’ve made these numerous times and I just love them.
Why You’ll Love this Recipe
It’s a simple recipe made even simpler with a bag of riced cauliflower you can grab at your local market.
If you’re a fan of anything buffalo flavor like we are then you’re going to love these.
These patties are so versatile. Add one on top of a bed of mixed greens as a nice satisfying salad or add your pattie to a pita with some greens and enjoy as more of a sammie.
Ingredients You’ll Need
- riced cauliflower
- garlic cloves
- buffalo sauce (use your favorite)
- panko
- Monterey Jack cheese
- salt and pepper
- large eggs
- olive oil
Step-By-Step Instructions
The first step is to cook your cauliflower according to the directions on the bag. I cooked mine in the microwave. After it’s cooked you’ll add it to a bowl, fluff it with a fork and let it cool.
Once it’s cooled, you’ll add your garlic, buffalo sauce, panko, shredded cheese, salt and pepper and lightly beaten eggs to your bowl.
Next up, you’ll mix gently with a rubber spatula until well combined. You will shape the mixture into six equal patties and then chill them in your fridge for about 20 minutes.
The last step is to add your olive oil to a large skillet. Once the oil is hot you will add your patties to the skillet and cook undisturbed until the patties are browned on the bottom, about 3-4 minutes. Flip your patties and continue to cook for another four minutes. Transfer the patties to a platter and serve with blue cheese dressing, mixed greens and/or celery sticks.
These patties have a golden crispy exterior and they’re soft and lightly cheesy on the inside. It’s an easy healthier recipe that I really enjoy and hope you will too.
