Ingredients

  • 12 oz. riced cauliflower, frozen
  • 2 cloves garlic, minced
  • 2 Tbsp. buffalo sauce
  • 3/4 cup panko crumbs
  • 1/2 cup shredded Monterey Jack Cheese
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 large eggs, lightly beaten
  • 2 Tbsp. olive oil
  • blue cheese dressing and crumbles, celery sticks, mixed greens for serving, if desired

Instructions

  • The first step is to cook your cauliflower according to the directions on the bag. After it's cooked you'll add it to a bowl, fluff it with a fork and let it cool.
Once it's cooled, you'll add your garlic, buffalo sauce, panko, shredded cheese, salt and pepper and lightly beaten eggs to your bowl. Mix gently with a rubber spatula until well combined. You will shape the mixture into six equal patties and then chill them in your fridge for about 20 minutes.
  • Add your olive oil to a large skillet over medium heat. Once the oil is hot you will add your patties to the skillet and cook undisturbed until the patties are browned on the bottom, about 3-4 minutes. Flip your patties and continue to cook for another 4minutes. Transfer the patties to a platter and serve with blue cheese dressing and crumbles, mixed greens and/or celery sticks, if desired.

Notes

I used frozen riced cauliflower for this recipe that I cooked in my microwave according to the package directions.
I love serving my patties with blue cheese dressing and added crumbled blue cheese on top.
