Cheesy Ranch Mashed Potato Casserole

This Cheesy Ranch Mashed Potato Casserole is to die for AND it’s ridiculously easy! Creamy potatoes, ranch seasoning, bacon, onions and cheese make for a dish you’ll want to serve your family again and again!

Step-By-Step Instructions

The first step will be to cook your potatoes according to the package directions and set aside.

The second step will be to cook your bacon until crispy, remove to a paper towel-lined plate and set aside.

The third step will be add your potatoes, ranch seasoning, about ½ of your bacon, 1 ½ cups of your shredded cheese, sour cream and green onions to a large bowl. Mix until well combined.

Next up, you’ll add to a 2-quart baking dish and then top with remaining cheese, bacon and the Parmesan cheese. Lightly cover the potatoes with foil and bake for 20 minutes.

The last step is to remove the foil and continue to bake for 5 minutes until the cheese is totally melted. Remove from the oven, top with chopped chives and serve.

The already prepared refrigerated mashed potatoes make this casserole super duper easy. And during the holiday season I know how busy things can get in the kitchen, so no one has to know you didn’t make your mashed potatoes from scratch but you. And take it from me, I don’t think anyone can really tell.

You’ll jazz them up with a few added ingredients that push the flavor bar up and over the top. This is one side that everyone will enjoy. Serve them in addition to the brussels sprouts with horseradish honey mustard glaze that I shared earlier in the week and you’re set!

Ingredients  

• 1 32-oz. family size package regular mashed potatoes, I used Main St Bistro
• 2 Tbsp. dry ranch seasoning
• 8 slices bacon, chopped
• 2 cups freshly shredded Colby Jack cheese
• 1/2 cup sour cream
• 1/4 cup green onion, thinly sliced
• 1 Tbsp. grated Parmesan cheese
• 1-2 Tbsp. chopped chives, for garnish

Instructions 

• Preheat oven to 400 degrees. Spray a 2-quart baking dish with nonstick cooking spray and set aside.
• Cook potatoes according to package directions. Set aside.
• Add bacon to a large skillet and cook over medium high heat until crisp. Remove with a slotted spoon to a paper towel-lined plate and set aside.
• Add your potatoes, ranch seasoning, about ½ of your bacon, 1 ½ cups of your shredded cheese, sour cream and green onions to a large bowl. Mix until well combined. Add to a 2-quart baking dish and then top with remaining cheese, bacon and the Parmesan cheese. Lightly cover the potatoes with foil and bake for 20 minutes. Remove the foil and continue to bake for 5 minutes until the cheese is totally melted. Remove from the oven, top with chopped chives and serve.

Notes

Always freshly shred your cheese because it melts more smoothly. Don't use the bagged shredded cheese.
