This Cheesy Ranch Mashed Potato Casserole is to die for AND it’s ridiculously easy! Creamy potatoes, ranch seasoning, bacon, onions and cheese make for a dish you’ll want to serve your family again and again!
Well, the big day is getting closer folks! How’s the planning going?
I know most people probably do a turkey for Thanksgiving, but really anything goes. If you’re not a turkey fan, I know some people do a ham or some kind of a beef entrée. Whatever works.
Well, today’s Cheesy Ranch Mashed Potato Casserole goes with anything. I made this little number a few times over the summer with steaks from the grill and seriously…could not stop eating. Everyone LOVES it! You NEED this casserole in your life!

I love it because it’s ridiculously easy. I mean, just 8 ingredients, 15 minutes of prep time and 25 minutes of bake time.
This casserole is made with already prepared refrigerated mashed potatoes that you can buy from your local market, so no cooking and mashing potatoes by hand.
Leftovers taste just as delicious…that is if you have any.
Goes well with beef, turkey, chicken, pork, ham, you name it.
Ingredients You’ll Need
- refrigerated mashed potatoes
- dry ranch seasoning
- bacon
- Colby Jack cheese
- sour cream
- green onions
- grated Parmesan cheese
- chives
Step-By-Step Instructions
The first step will be to cook your potatoes according to the package directions and set aside.
The second step will be to cook your bacon until crispy, remove to a paper towel-lined plate and set aside.
The third step will be add your potatoes, ranch seasoning, about ½ of your bacon, 1 ½ cups of your shredded cheese, sour cream and green onions to a large bowl. Mix until well combined.
Next up, you’ll add to a 2-quart baking dish and then top with remaining cheese, bacon and the Parmesan cheese. Lightly cover the potatoes with foil and bake for 20 minutes.
The last step is to remove the foil and continue to bake for 5 minutes until the cheese is totally melted. Remove from the oven, top with chopped chives and serve.
The already prepared refrigerated mashed potatoes make this casserole super duper easy. And during the holiday season I know how busy things can get in the kitchen, so no one has to know you didn’t make your mashed potatoes from scratch but you. And take it from me, I don’t think anyone can really tell.
You’ll jazz them up with a few added ingredients that push the flavor bar up and over the top. This is one side that everyone will enjoy. Serve them in addition to the brussels sprouts with horseradish honey mustard glaze that I shared earlier in the week and you’re set!

A Few Cook’s Notes for Cheesy Ranch Mashed Potato Casserole
Always freshly shred your cheese because it melts more smoothly. Don’t use the bagged shredded cheese.

- 1 32-oz. family size package regular mashed potatoes, I used Main St Bistro
- 2 Tbsp. dry ranch seasoning
- 8 slices bacon, chopped
- 2 cups freshly shredded Colby Jack cheese

- Preheat oven to 400 degrees. Spray a 2-quart baking dish with nonstick cooking spray and set aside.
