Who’s ready for a cupcake?
I certainly am. And we’re not talkin’ just one.
It’s been a helluva week hasn’t it?! It’s been so hard to focus.
I was wondering, should I keep posting? Is everyone too stressed to read?
But then I spoke to one of my very good friends a few days ago to commiserate about the state of events, and she said she was so happy she could pop on the blog, page through my recipes and take her mind off things. It made her happy.
Well, that’s all I needed to hear!
So here I am folks! AND of course I didn’t come empty handed. I’ve got some Snickerdoodle Cupcakes with Cinnamon Buttercream!
I was going to wait a few weeks to share these because I thought they would be perfect for your Easter dessert table, but I think we could all use a cupcake or two right about now, couldn’t we?
And what’s great about these super cinnamony cupcakes, is that you probably have all the ingredients for both the cupcakes and the buttercream right in your pantry and refrigerator. Flour, sugar, cinnamon, confectioners’ sugar, butter, eggs and milk are among the usual cast of characters.
The cupcakes are moist and fluffy and have a nice dose of cinnamon and vanilla, as does the ultra-smooth cinnamon buttercream.

A Few Cook’s Notes for Snickerdoodle Cupcakes with Cinnamon Buttercream Recipe:
I used my Wilton 2D piping tip to frost these cupcakes, but you don’t have to be fancy. You can just frost with a knife or a plain round tip. You choose.
If you have any extra frosting, you can use it to sandwich graham crackers or just keep it in the fridge in an airtight container for up to month.
If you’d rather frost your cupcakes with vanilla buttercream, just omit the cinnamon.
Snickerdoodle Cupcakes with Cinnamon Buttercream

Cinnamon Sugar Topping
- 4 Tbsp. granulated sugar
- 1 tsp. cinnamon
Snickerdoodle Cupcakes
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 cup (one stick) unsalted butter
- 1 cup granulated sugar
- 1 large egg
- 1 tsp. vanilla extract
- 2/3 cup milk
Cinnamon Buttercream
- 1 cup (two sticks) unsalted butter, room temperature
- 4 cups confectioners' sugar
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
- 2-4 Tbsp. milk
Instructions
Cinnamon Sugar Topping
- In a small bowl, mix sugar and cinnamon until well blended. Set aside.
Snickerdoodle Cupcakes
- Preheat oven to 350 degrees. Line a standard muffin tin with paper liners and set aside.
- In a medium bowl, whisk together flour, baking powder, cinnamon and salt. Set aside.
- In the bowl of a stand mixer fitted with a paddle attachment, beat butter and sugar on medium high speed until light and fluffy, about 2-3 minutes. Add egg and mix until well blended. Add vanilla and beat an additional 1 minute. With a spatula add the flour mixture until just combined, then add the 2/3 cup milk being careful not to over mix.
- Spoon batter into liners about 2/3 full. Sprinkle tops of batter with some of the cinnamon sugar topping. Bake for 18-20 minutes or until a toothpick inserted in the middle of the cupcakes comes out clean. Remove from oven and let cool on wire rack. After cupcakes are totally cooled, frost with cinnamon buttercream.
Cinnamon Buttercream
- In the bowl of a stand mixer combine butter, confectioners' sugar and cinnamon. Beat on low speed until blended, about one minute. Add the vanilla and the milk, starting with two tablespoons, and increase speed to medium and continue to beat for 4 minutes until smooth and creamy. Add more milk if needed to get to desired spreading consistency. Frost cupcakes. Sprinkle tops of cupcakes with some of the cinnamon sugar mixture.
