A few months back, Tom and I went to a little fish restaurant on the water in the Isles of Capri near Naples Florida. I had a tasty fish sandwich for lunch with a side of their delicious coleslaw. It was the first time I had coleslaw with pineapple. But it wasn’t the last because you know me, when I go out to eat and order something I really enjoy, you know I’m going to recreate it at home.
So today, I’m dishing up this tasty Pineapple Coleslaw.

The addition of the pineapple tidbits gives the coleslaw a slightly sweet pineapple-y taste that makes it just a bit different from your traditional coleslaw.
Ingredients You’ll Need
- mayonnaise
- apple cider vinegar
- granulated sugar
- celery seed
- salt and pepper
- pre-packed coleslaw mix
- carrots
- green onions
- canned pineapple tidbits
Step-By-Step Instructions
Only two steps to pull this recipe off folks.
The first step is to make your dressing by combining your mayo, vinegar, granulated sugar, celery seed and salt and pepper in a bowl and whisk until smooth.
The second step is to add your coleslaw mix, shredded carrots, green onions and pineapple tidbits to a large bowl. You’ll pour over as much dressing as your prefer and mix until the coleslaw is well coated. You’ll refrigerate the slaw until you’re ready to enjoy.
That’s it. Could things get much easier. I think not.
I like to add the extra shredded carrots to my slaw because there’s never enough in the bag of pre-shredded slaw mix.
We really enjoy this with our pulled pork. It’s great as a side or even on a pulled pork sandwich.

- 1/2 cup mayonnaise
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. granulated sugar
- 1/2 tsp. celery seed
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 5 cups pre-packed shredded coleslaw mix
- 2/3 cup freshly shredded carrots
- 1/4 cup sliced green onions
- 1 8-oz. can pineapple tidbits, drained
Instructions
- In a small bowl, whisk together your mayo, vinegar, sugar, celery seed, salt and pepper until smooth.
- To a large bowl, add your coleslaw mix, carrots, green onions and pineapple tidbits. Pour over as much dressing as your prefer and toss until everything is coated and well combined. Cover the bowl with plastic wrap and refrigerate until ready to serve.
