This Pimento Cheese Creamy Corn is so creamy, so cheesy and a pimento cheese lovers dream.
It’s made super simple with canned Green Giant whole corn kernels and it’s a fabulous side for your holiday table this year.
What is Pimento Cheese?
Pimento Cheese is a Southern staple. It’s a dip or spread that’s made with shredded cheese, mayonnaise and chopped pimentos.
It can be served as an appetizer with crackers, as a topping for burgers or incorporated into your grilled cheese, grits or even your morning omelette.

It’s made with Green Giant low sodium whole kernel corn and anything low sodium is better for us.
Ingredients You’ll Need
- unsalted butter
- green onions
- all-purpose flour
- celery saly
- cayenne
- whole milk
- heavy cream
- sharp white cheddar cheese
- sharp yellow cheddar cheese
- diced pimentos
- canned Green Giant Whole Kernel Sweet Corn Low-Sodium
- granulated sugar
Step-By-Step Instructions
The first step is to melt your butter over medium heat and then add your sliced onions. You’ll cook 3-4 minutes until translucent.
The second step is to whisk in your flour, celery salt and cayenne and cook for 2 minutes, stirring constantly. You will slowly whisk in milk and cream and cook until thickened, about 4 minutes followed by ¾ cup of each of the shredded cheeses.
The third step is to add in your pimentos and corn. You’ll mix until well combined and then stir in the granulated sugar.
The last step is to pour your mixture into your prepared baking dish and then top with the remaining shredded cheese. The corn will bake for 15-20 minutes or until the cheese is melted and corn is bubbly.
Besides the fact that this corn side dish is really delicious, I love that it can be made a day in advance. We all know how busy Turkey Day can be, so many moving parts to make the meal memorable, so when we can spread out the work over a few days, all the better.

A Few Cook’s Notes for Pimento Cheese Creamy Corn
This recipe can be made a day ahead of time. Just cover in foil and refrigerate until the day you’re ready to bake. Remove it from the fridge while your oven preheats. Bake until the corn is bubbly and the cheese is melted.

- 5 Tbsp. unsalted butter
- 6 green onions, thinly siced
- 2 Tbsp. all-purpose flour
- 3/4 tsp. celery salt
- 1/4 tsp. cayenne
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 cup shredded sharp white cheddar cheese
- 1 cup shredded sharp yellow cheddar cheese
- 1 4-oz. jar diced pimentos, drained and rinsed
- 2 15.25-oz. cans Green Giant Whole Kernel Sweet Corn Low-Sodium, drained
- 2 tsp. granulated sugar
Instructions
- Preheat oven to 375 degrees. Spray a 9x 11 (or similar size) baking dish with nonstick cooking spray. Set aside.
- In a large saucepan, melt butter over medium heat. Add sliced onion and cook 3-4 minutes until translucent. Whisk in flour, celery salt and cayenne and cook for 2 minutes, stirring constantly.
