I have made these 4 times in the last few weeks and they’re incredibly delicious and so perfect for all those GORGEOUS summer peaches! They have a sweet peach filling with a fabulous crunchy streusel topping thatโs got a little hint of cinnamon. They’re absolutely addictive!
There is nothing better than a juicy summer peach in my book. If you’re a regular follower here at the BHK, you know I was not always a fruit lover. As a kid, my twin sister was all about the fruit. I was not. But there were a few fruits I did like early on. Watermelon was one and peaches were another. Both sweet and super juicy and the perfect summer treat!

This recipe makes a nice 9ร13 pan of bars and they take less than an hour to whip up.
They also freeze really well, so just place some extras in a freezer bag or container and pop one out to defrost to have with a cup of tea or coffee and youโre all set.
Ingredients You’ll Need
- unsalted butter
- all-purpose flour
- old-fashioned oats
- light brown sugar
- granulated sugar
- ground cinnamon
- baking powder
- salt
- can sweetened condensed milk
- egg
- vanilla extract
- lemon
- fresh peaches
- confectioners’ sugar
- milk
Step-By-Step Instructions
The first step will be to make your vanilla glaze. You’ll combine your confectioners’ sugar, milk and vanilla extract in a small bowl and whisk together until well combined and smooth. Set aside.
The second step is to combine flour, oats, sugars, cinnamon, baking powder and salt. Add the melted butter and stir to combine. Mixture will be crumbly. Set 2 cups of the mixture aside to reserve for topping. Press remaining mixture into bottom of 9×13 pan. Try to get crust as even as possible and bake at 350 degrees for 10 minutes.
The third step is to whisk together sweetened condensed milk, lemon juice and zest, egg yolk, and vanilla.
You’ll gently fold in your chopped peaches until well combined. Top your warm crust with the peach mixture.
The fourth step is to sprinkle the reserved topping over the peach mixture and bake for 30 minutes until the edges and the crumb topping is lightly browned.
You’ll let the bars cool to room temperature on a wire rack.ย After the bars have cooled you can drizzle them with the vanilla glaze as pictured โ. The glaze is optional. Cover the bars with plastic wrap and chill in your fridge for an hour or two before slicing.
Lift the bars out of the pan by holding the parchment overhang. Peel back the parchment and cut into bars. You can store the bars at room temperature for an hour or two then refrigerate covered with foil or plastic wrap for up to five days.

A Few Cook’s Notes for Peach Streusel Bars
The glaze is totally optional. Sometimes I add it, sometimes I like them plain. You decide. It’s delicious with or without the glaze.
If you opt to skip the glaze, you can sprinkle the bars with confectioners’ sugar instead.
These peach bars freeze well. Just add to an airtight container or freezer bag and when you’re ready to enjoy thaw in fridge before serving.

- 1 cup confectioners' sugar

- 1 Tbsp. freshly squeezed lemon juice
- 2 tsp. lemon zest
- 3 cups chopped fresh peaches
Instructions
- Preheat oven to 350 degrees. Place rack in center of oven. Line a 9x13 pan with parchment paper or foil, leaving an overhang on the ends for easy removal. Lightly spray the bottom and sides with non-stick cooking spray. Set aside.
Vanilla Glaze
- Combine your confectioners' sugar, milk and vanilla extract in a small bowl and whisk together until well combined and smooth. Set aside.
Peach Bars
- Combine flour, oats, sugars, cinnamon, baking powder and salt in a large bowl. Add the melted butter and stir to combine. Mixture will be crumbly. Set 2 cups of the mixture aside to reserve for topping. Press remaining mixture into bottom of 9x13 pan. Try to get crust as even as possible and bake at 350 degrees for 12 minutes. Remove crust from oven.
- In a large bowl, whisk together sweetened condensed milk, lemon juice and zest, egg yolk, and vanilla. Gently fold in your chopped peaches until well combined. Top your warm crust with the peach mixture and then top the peach mixture with your reserved 2 cups of crumbs. Bake for 30 minutes until the edges and the crumb topping is lightly browned.
- Let the bars cool to room temperature on a wire rack. After the bars have cooled you can drizzle them with the vanilla glaze. The glaze is optional.
