It’s technically only 4 ingredients because you will be using limes, but if you count the juice and the zest it’s 5 instead of 4.
If you’re a key lime pie lover you’re going to find this easy cracker pie just as enjoyable.
Ingredients You’ll Need
- sweetened condensed milk
- heavy cream
- limes
- Ritz crackers
Step-By-Step Instructions
The first step is to whisk together the sweetened condensed milk and the heavy cream until well combined.
The next step is to add the key lime zest and juice and whisk until thickened.
Step three will be to assemble your pie. You’ll spread one cup of the condensed milk mixture in the bottom of your 11-inch oval casserole dish or deep-dish pir plate. You’ll top with a single layer of the crackers.
You will repeat, alternating the layers of filling and crackers until your dish is full, finishing with a layer of the filling.
You will want to refrigerate for at least two hours to overnight. I refrigerated mine overnight. The longer you refrigerate the more the crackers will soften and meld with the filling.
Serve it cold from the fridge with a sprinkle of added lime zest on top.

A Few Cook’s Notes for Key Lime Cracker Pie
The recipe calls for Ritz crackers, but I’ve also substituted Townhouse crackers on occasion.
You can use fresh key lime juice and zest if you can find them. If not, you can use Nellie and Joe’s Famous Key West Lime Juice and regular lime zest. You can find Nellie and Joe’s at your market in either the baking aisle or the juice aisle.

- 2 14-oz. cans sweetened condensed milk
- 2 cups heavy cream
- 1 Tbsp. finely grated lime zest, plus more for sprinkling on top as a garnish
- 1/2 cup freshly squeezed key lime juice, or Nellie and Joe's Famous Key Lime Juice
- 10 oz. Ritz crackers, about 85 crackers from about 3 sleeves
Instructions
- In a large bowl, whisk together the sweetened condensed milk and the heavy cream until well combined. Add lime juice and zest and whisk until thickened, about 1 minute.
- Spread one cup of the mixture in the bottom of an 11-inch oval casserole dish or a deep dish pie plate. Top with a layer of Ritz crackers (as pictured above). Repeat, alternating the layers of the filling and the crackers until your dish is full, ending with a layer of filling.
- Cover with plastic wrap and refrigerate for at least 2 hours or overnight. I refrigerated mine overnight. The longer you refrigerate the more the crackers will soften and meld with the creamy filling. Serve it cold with some added lime zest sprinkled on top for garnish.
