There’s nothing like this sweet, tart Blueberry Lemon Zinger Smoothie to get us back on the healthy track for the New Year!

Welcome to 2017 friends!

I hope everyone had a fabulous holiday. Mine was wonderful! Tom, Casey and I went down to Charleston to spend Christmas with our oldest son Sean. The weather was beautiful, and the food was fabulous, as usual! For the most part, I unplugged from social media, did some knitting, binge watched The Crown and a few other shows on Netflix, went to the movies, snuggled under cozy blankets in front of the fire with my dog Tucker, and made AND ate more cookies than I cared to count. It was heavenly. And now…it’s back to reality.

Blueberry Lemon Zinger Smoothie

After weeks of indulging, it’s time to put away the stretchy pants and get down to the business of eating healthy and working out. This Blueberry Lemon Zinger Smoothie is one of my favorite post-workout smoothies. It’s sweet and tart and gives me the boost of energy I need after I get my you know what kicked at the gym.

Blueberry Lemon Zinger Smoothie

It’s loaded with blueberries, lemon juice and lemon Greek yogurt, kiwi, a frozen banana and some coconut water. I used fresh blueberries, but frozen work well too. I add one cup of coconut water, but feel free to add more or less depending on how thick you like your smoothie. I’ll let you decide.

I spent some time over the holidays planning what delicious recipes I’ll be sharing in 2017. I’ve got lots of good things in store for you guys! Ingredients
  • 1 cup fresh or frozen blueberries
  • 1 kiwi skinned
  • 1 frozen banana
  • juice of half a lemon
  • 1 5.3 oz. container lemon flavored Greek yogurt I use Chobani
  • 1 cup coconut water
Instructions
  1. Place all ingredients in a blender and process until smooth.

    Happy New Year Mary Ann. I wore my stretchy pants for two weeks straight and when I finally had to put on jeans, it was so scary. Maybe I should drink this smoothie for breakfast, lunch and dinner. Love it!

    My 20 year old blender died this year, Mary Ann – so I treated myself to a Vitamix for Christmas. So I need lots of smoothie inspiration – and this one looks perfect. I love blueberries and never thought of adding flavored yogurt – that’s a great idea. Looking forward to all the wonderful recipes you come up with this year! Cheers to a wonderful 2017!

    Happy new year Mary Ann. I’m still struggling to get back into the swing of things. I think once our schools start again next week it will be easier to NOT lounge around all day.
