Hello there folks! Hope y’all had an awesome 4th of July holiday! We thoroughly enjoyed the long holiday weekend! We did some boating, BBQing and relaxing, but now it’s back to business.
Today’s recipe for Tex-Mex Migas is an oldie, but a goodie at our house. I can’t tell you how often I make this one for breakfast, lunch or dinner. I’ve always been a fan of breakfast at any time of the day. How bout you?

This recipe takes 20 minutes from start to finish. Only 5 minutes of prep time and roughly 15 minutes to cook. Couldn’t be easier.
I don’t know about you guys, buy I’m sure if you mention the kids can have tortilla chips for breakfast, I’m guessing they’d be all about it!
I opt for the can of Rotel tomatoes and green chiles, so there’s no need to get out a knife and hand chop the tomatoes. But all means, if you prefer fresh tomatoes or have tomatoes from your garden you want to use up go for it. You can just grab a can of diced green chiles from the market, drain them and add them in with the fresh tomatoes.
Ingredients You’ll Need
- corn tortilla chips
- eggs
- half-and-half
- salt and pepper
- butter
- yellow onion
- Rotel tomatoes and green chiles
- shredded Monterey Jack cheese
I decided to use Monterey Jack cheese which I freshly shredded, but you could also use cheddar or cheddar jack or pepper jack. You decide.
In any dish it’s always better to use freshly shredded cheese because it melts better. Bagged shredded cheese contains anti-caking agents like powdered cellulose or potato starch to keep the cheese from clumping in the bag. These agents prevent the cheese from melting well during cooking.
Step-By-Step Instructions
The first step is to whisk together your eggs and half and half. Add some salt and pepper, but don’t overdue the salt because the tortilla chips are salty.
The next step will be to melt your butter in a skillet and then add your onion and cook for about 5-7 minutes until slightly softened and translucent. After the onions are softened you’ll add your tomatoes and green chiles.
Next up you will add your egg mixture and scramble the way you prefer your eggs. Add your tortilla chips and continue to cook for about one minute.
The last step will be to top with your shredded cheese and stir it in until it’s melted.
We enjoy our Tex-Mex Migas served with our favorite salsa and hot sauce. This is a super easy breakfast that doesn’t take a lot of effort. Keep this one in your back pocket for back-to-school because the kids love it!

A Few Cook’s Notes for Tex-Mex Migas
I use corn tortilla chips for this recipe. I’ve had friends change things up and use their favorite flavor of Doritos. Add what you enjoy!
Make sure to drain your can of Rotel tomatoes with green chiles. Using the can cuts down your prep time significantly, but if you prefer fresh tomatoes can be substituted.
