This Plantation Crunch is an irresistible mixture of white chocolate, peanut butter, nuts and crispy cereal! Only four ingredients! You won’t be able to stop!
Hi guys! Can you believe two weeks from today is Thanksgiving?? Two weeks until the biggest food holiday of the year!! Are you ready? Do you have it all planned out? I find planning ahead takes the stress level way down. So now’s the time to break out the little notepad and pen and write down a few things, get organized, and shop ahead so you don’t get stuck at the market with all the last minute shoppers. I know when I’m in a hurry it never fails, I get behind Susie Slowpoke or I finally get to the check out and the person in front of me has decided to ask for a price check! UGH! Really?? So for me, planning ahead makes for a happy cook in my kitchen!
And believe you me, this time of year my kitchen is the place to be!! There is always something cooking or baking. I have to admit my favorite part is the baking. Do you guys have certain recipes that make your holidays special? I have so many, so for me I start baking my favorites around Thanksgiving. There are always some special sweets on my dessert table at Thanksgiving. One of my favorites is this Plantation Crunch. I have been making this recipe every holiday season since my twin sister Patty married my brother-in-law Ken. I know this exactly because this is Ken’s mother’s recipe. Thank you Mrs. Voigt!
I made a batch of this yummy stuff last week before I left to visit my son Casey at University of Michigan for Parent’s weekend. I was not going to show up empty-handed, so Case and his roommates got two kinds of cookies, a double batch of brownies and some of this irresistible candy. I dropped it off at Casey’s apartment on Friday night and by Saturday morning it was almost all gone!
Just look at the ingredients for this Plantation Crunch friends and you’ll know why it disappeared so quickly. White chocolate, peanut butter, dry roasted nuts and Rice Krispies cereal. That’s it! Can it get any better? I’m thinking that would be a no. Mrs. V. uses white almond bark, but since I sometimes have a hard time finding it, I use white chocolate chips. Feel free to use either one because they both work perfectly. And honestly, this recipe is so easy and it makes a really big batch too. I like to put mine in individual paper cups, as pictured, but Mrs. V. says you can also just spread it out onto a piece of wax paper on a baking sheet until it’s dry and then break it into chunks. It’s the perfect little treat to take along as a hostess gift for all those holiday parties! I hope this one becomes a family favorite at your house like it is at mine!

Ingredients
- 4 cups Rice Krispies
- 1 cup dry roasted peanuts finely chopped
- 16 oz. white chocolate chips or 16 oz. white almond bark, chopped
- 1/4 cup crunchy peanut butter
- Sprinkles or nonpareils optional
Instructions
- In a large bowl stir together Rice Krispies and dry roasted nuts.
- Place white chocolate chips in a medium microwave safe bowl.
- Microwave in 20 second intervals, stirring in between, until melted.
- Stir peanut butter into the melted chocolate until well combined.
- Pour white chocolate mixture over Rice Krispies mixture and stir carefully until Rice Krispies are thoroughly coated.
- Scoop mixture into individual cups and top with sprinkles or nonpareils or spread out on a wax paper lined baking sheet until dry. Then break into chunks.
- Store in an airtight container.

Honestly, Mary Ann, this will be the third year in my life I am not partaking (or hosting) a huge Thanksgiving. Since we moved to NC I will be celebrating Turkey day here with just Boy and my In-laws… 4 people doesn’t really call for a huge charade. I’m bummed, but at the same time a little relieved. I’m sure you will understand this as a blogger, I’ve already made Thanksgiving dinner for the blog (turkey and stuffing coming at ya next week).. sooo I’m kind of on to christmas already in spirit. Lol.

I had my pre-Thanksgiving dinner last weekend in the mountains because I ‘m leaving for Germany in a week to celebrate my brother’s birthday . My favorites this year was my cranberry ketchup and the stuffing.
