These Grilled Mahi Mahi and Vegetables in Foil Packets are a win-win for summer! Perfect for a quick and easy grilled dinner and so healthy!
We’re starting off the week on the right foot folks. I promised you all some more seafood and that’s just what you’re gonna get. So today, it’s Grilled Mahi Mahi and Vegetables in Foil Packets for the win!
There are a few things I need to come clean on before I share the recipe with you guys today. Number one… I can’t take total credit for this dish. I may have created the recipe (as simple as it is), prepared the foil packets and cooked them on the grill, but that was actually the easy part. The hard work was done by someone other than me. Today, all the credit goes to the fisherman who spent the day out on the water trying to reel in something we could all enjoy for dinner.
Now for confession number two. See the top pic of the cooked mahi? Well, that’s not from the original fish. The night I went to cook it, I prepared all the packets and put them on the grill and I noticed some clouds rolling in. And I’m not talking little clouds. I’m talking huge, big, black, menacing clouds! Ugh! I needed to cook those packets and whip them off the grill and snap some photos! Unfortunately, Mother Nature was not on my side. It started to pour and the house got really dark and the final photos were not meant to be that night. And since we all divvy up the fish, I had no more left for photos. Wah wah! So even though the fish in the photo was fresh mahi, it just wasn’t “our” fresh mahi. Sorry!
To land our fish, my husband Tom and his two good friends Joey and Ed spent the day 60 miles out in the Atlantic in search of something other than chicken for our plates for dinner. That’s Joey holding dinner right ↑ up there! I think they were really hoping for some tuna, but this mahi was a beauty! And I was happy because mahi happens to be one of my favorites. Have you guys ever tried it? If you haven’t you definitely need to give it a go. Mahi has light, sweet, moist meat with a firm texture. It’s perfect grilled or baked.
And what’s great about this recipe is not only how good it is for you, but how easy it is to put together. Just add some sliced baby potatoes and fresh green beans to a piece of heavy duty foil, sprinkle the fish with salt, fresh ground pepper and some Old Bay seasoning and then drizzle with a mixture of fresh lemon, olive oil, salt and pepper. Then throw the packets on the grill for 10-12 minutes until the fish flakes and it’s winner, winner chicken FISH dinner! Hope you enjoy! Have an awesome week!
Grilled Mahi Mahi and Vegetables in Foil Packets

- 1 lb baby potatoes
- 1 lb. green beans trimmed
- 4 6-oz. pieces Mahi Mahi fillets
- 4 tsp. Old Bay seasoning divided
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup olive oil
- juice of one lemon
- 4 slices fresh lemon, for garnish
- 1 Tbsp. fresh chives, finely chopped for garnish
Instructions
- Preheat grill to medium heat. Cut four 18x12 inch sheets of heavy-duty foil. Spray with non-stick cooking spray.
- Place potatoes in a microwave safe bowl and microwave uncovered for 4 minutes or until just tender. Remove from microwave and when cool enough to handle, cut into 1/4 inch slices.
- Place equal amount of potatoes and beans on center of each sheet of foil.
- Place a piece of mahi on each sheet on top of the potatoes and beans.Sprinkle each fillet with one teaspoon Old Bay seasoning and salt and pepper, to taste.
- Fold up four sides of the foil.
- In a small bowl, whisk together olive oil and lemon juice with 1/2 tsp. salt and 1/2 tsp. pepper.
- Drizzle mixture evenly over each packet.
- Seal edges of foil tightly, allowing some space for heat circulation. Place on grill. Cover. Cook for 10-12 minutes or until fish is opaque and cooked though.
- Serve immediately. Garnish with fresh lemon slice and chopped chives.

Hi Sara! I do these in the oven too. Bake at 400 degrees for 15 minutes. Remove from oven and let stand 2-3 minutes before opening. 15 minutes should be enough time, but it depends on the thickness of your fillets. Enjoy!
