There’s a chill in the air, and a Cranberry Orange Streusel Bar on my plate right next to my morning coffee folks! I’m doing my fall happy dance! Woot Woot!
How was everyone’s weekend? Anyone do a little apple picking? Visit the pumpkin patch with the kiddos? Halloween costume hunting perhaps?
I feel like since the first day of fall hit, it’s felt more like summer around here. I hadn’t really been in the mood to do any of the above mentioned activities.
I mean who wants to visit the pumpkin patch and break out into a sweat? Not me!
I want chilly temp sweater weather! Is that too much to ask?!
Well, this weekend my dream came true! Cooler temps and time to break out that cozy fall sweater I’ve been dying to wear!
And I’m not stopping with just the sweater.
You know what else I want? Well, I’m gonna tell ya…
I want these Cranberry Orange Streusel Bars with my morning coffee or warmed and topped with a big ole scoop of vanilla ice cream for dessert. It’s the PERFECT fall treat!
An easy as can be bottom and topping made with my favorite Bob’s Red Mill Old-Fashioned Oats. You know Bob’s products are always a favorite in my kitchen. Their Old-Fashioned Oats are gluten-free and organic. They’re a great source of fiber which can help get your digestive system on track and help prevent the risk of heart disease.
A Few Cook’s Notes for Cranberry Orange Streusel Bars Recipe:
Don’t over pulse the oats in your food processor. You don’t want them finely ground. You want them to add a bit of texture to the bars.
When cooking the cranberry orange filling, stir the mixture and break up some of the cranberries with the back of the spoon.
These Cranberry Orange Streusel Bars have a somewhat sweet, somewhat tart filling made of fresh cranberries, orange juice, orange zest and sugar with a hint of vanilla.
Sounds totally cozy, right? These bars have fall and the upcoming Thanksgiving holiday written all over them!
The filling comes together in minutes and I think you’ll really enjoy it.

Cranberry Orange Streusel Bars

Cranberry Orange Filling
- 4 cups whole fresh cranberries
- 1 cup granulated sugar
- 1 Tbsp. cornstarch
- 1/4 cup orange juice
- 1 Tbsp. freshly grated orange zest
- 1 tsp. vanilla extract
Crust and Topping
- 1 cup Bob's Red Mill Old-Fashioned Oats
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, firmly packed
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 cup (two sticks) cold unsalted butter, cut into small cubes
- 1 large egg
- 1 tsp. vanilla extract
Instructions
Cranberry Orange Filling
- Combine all filling ingredients in a medium saucepan over medium-high heat. Mix until well and bring to a boil. Once the mixture comes to a boil, reduce heat to low and cook for 4-5 minutes until slightly thickened, stirring constantly. Remove from heat and set aside to cool.
Crust and Topping
- Preheat oven to 350 degrees. Line a 9X9 pan with parchment paper. Set aside.
- Place oats in food processor and pulse 8 times.
- In a large bowl, combine oats, flour, sugars, baking powder, cinnamon and salt. Whisk together. Add butter. Cut in with pastry cutter until mixture resembles coarse crumbs.
- In a small bowl, lightly beat egg and vanilla. Add to oat mixture and mix together using your fingers until the dough begins to clump together
- Tightly press 2/3 of the mixture into the bottom of your prepared pan. Spread cranberry orange filling over crust to 1/2 inch of outer edges. Top with remaining crumb mixture. Bake for 40-45 minutes, until lightly browned on top. Remove from oven and cool on wire rack for 30 minutes, then place in refrigerator to cool totally. Cut into squares and serve plain or with ice cream or fresh whipped cream if desired.

I’m with you Mary Ann. Fall came rolling in like a freight train, now didn’t it? We too had been having warm temperatures and today. . .well. . .I couldn’t believe that the sidewalks are now carpeted with crunchy leaves.
