Hello friends. With the Memorial Day holiday behind us, it’s full steam ahead into the summer season, my favorite season of all.
Some of my fondest memories growing up are from my summers at the Jersey Shore. Long, lazy days at the beach followed by dinners grill side in the back yard with family and friends.
Things haven’t changed much. Now that I have my own family, we still appreciate the simple things in life, like staying home and enjoying a delicious meal cooked over an open flame.
During the summer months we grill all kinds of things. Fresh produce for our sides, like Jersey corn, asparagus and peppers to burgers, chicken, steaks and hot dogs for our main dish, and of course some s’mores or grilled pound cake with fresh fruit for dessert. We grab whatever we’ve got in the fridge and everyone gets a job.
I created today’s Chicken Souvlaki Skewers with Tzatziki Sauce with the help of my good friends at Kingsford Charcoal. (click for more yummy recipes)
Kingsford has always been our go-to-fuel when grilling. It gives our food the smoky wood-fired flavor that can’t be beat. It delivers the absolute best in authentic BBQ flavor.
I not only love the flavor, I love how super easy grilling is and how we all get involved.
Most of the time, I do the cooking in the kitchen, but it’s a different story when we break out the grill. Tom and the boys always love to help.
For these yummy skewers I prepared the marinade ahead, added the chicken and gave it a few hours in the fridge. After I skewered everything I handed them off to my grill master, Tom, to grill to perfection.
The chicken thigh meat is incredibly juicy and tender and the marinade flavored with fresh garlic, oregano, rosemary, rosemary, mint, lemon juice and zest gives these skewers that unmistakable Mediterranean flavor.
I love to serve these skewers with some traditional Tzatziki sauce which takes minutes to prepare too and can be made ahead of time. It’s a quick and easy combination of Greek yogurt, cucumber, garlic, fresh dill, lemon juice, a splash of olive oil and salt and pepper to taste.

A Few Cook’s Notes for Chicken Souvlaki Skewers with Tzatziki Sauce Recipe:
I used chicken thighs and red onion for my skewers. You could also add some red, green or yellow peppers if you’d like.
I let my chicken marinate in the fridge for about two hours before skewering and grilling.
You can make the tzatziki sauce a day ahead of time so that the flavors meld.
Chicken Souvlaki Skewers with Tzatziki Sauce

Tzatziki Sauce
- 2 5.3-oz. containers plain Greek yogurt
- 1 medium English cucumber, peeled, seeded and finely chopped
- 2 cloves garlic, minced
- 2 Tbsp. fresh dill, finely chopped
- 1 Tbsp. freshly squeezed lemon juice
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 Tbsp. extra virgin olive oil
Chicken Souvlaki Skewers
- 2 lbs. boneless, skinless chicken thighs, cut into 1 1/2-2-inch pieces
- 1/2 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- 1 Tbsp. lemon zest
- 3 cloves garlic, minced
- 3 Tbsp. fresh oregano, finely chopped
- 2 Tbsp. fresh rosemary, finely chopped
- 1 Tbsp. fresh mint, finely chopped
- 2 tsp. paprika
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 large red onion, cut into wedges
Instructions
Tzatziki Sauce
- Combine all ingredients in a medium bowl, whisk together until well combined. Chill.
Chicken Souvlaki Skewers
- Place chicken pieces in a large bowl. In a small bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, rosemary, mint, paprika, salt and pepper until well combined. Pour marinade over chicken. Toss to make sure all chicken pieces are coated well. Place in refrigerator to marinate for two hours.
- Remove chicken from the refrigerator and skewer onto wooden skewers with red onion wedges.Prepare your grill for cooking and place each skewer directly over the hot charcoals. Grill over high heat for about 8 minutes. Turn skewers and grill for another 8 minutes or until done. Serve skewers with the tzatziki sauce on the side.
