These Chicken Pizza Burgers are incredibly flavorful, easy to whip up and delicious for lunch or dinner. Enjoy with a bun or without if you’re counting calories!
I’m coming in quick and zesty today folks. I’m actually embarassed to say how many times I’ve made these burgers this summer, so guess what? I’m not gonna.
In my defense, summer is busy for us. There’s always lots to do at the beach and we also had a move on our plates this summer, so some nights dinner had to be easier than easy. In comes my late mother-in-law’s pizza burgers.
Tom grew up enjoying his Mom’s pizza burgers. I even tried his mom’s pizza burgers when we were dating and I got invited over for dinner. She made them with ground beef and they were always cooked in a skillet with lots of sauce and we never ate them on a bun. She usually served them with a side of scalloped potatoes and green beans and it was a comfort food dinner we all enjoyed.

Ingredients You’ll Need
- ground chicken
- mayonnaise
- seasoned panko crumbs
- Italian seasoning
- coarse kosher salt
- pepper
- olive oil
- pizza sauce
- freshly shredded mozzaerlla cheese
- fresh basil
- burger buns (optional)
Step-By-Step Instructions
The first step will be to combine your ground chicken, mayo, panko, Italian seasoning and salt and pepper in a large bowl.
You will mix all the ingredients gently together until well combined.
The second step will be to form the mixture into four equal patties.
The third step will be to heat your olive oil in a large skillet over medium-high heat. Once the oil is heated you will add your patties and cook for 3-4 minutes then flip the burgers and continue to cook for an additional 3-4 minutes or until the burgers are lightly browned and the internal temperature is 165 degrees F.
The fourth step will be to top each burger evenly with the pizza sauce and then the shredded mozzarella cheese. Cover the skillet with a lid just until the sauce is warmed and the cheese is melted.
These bring back memories of my mother-in-law’s pizza burgers. Tom and I love this healthier ground chicken version and I think you will too!

A Few Cook’s Notes for Chicken Pizza Burgers
You can substitute the pizza sauce for marinara if you prefer or if you already have a jar of marinara in your pantry.
Freshly shred your mozzarella because it will melt a lot smoother than the bagged shredded cheeses.
I buy regular ground chicken for this recipe, not the 98% fat free.
