Ingredients

  • 1 lb. ground chicken
  • 1 Tbsp. mayonnaise
  • 1/3 cup seasoned panko crumbs
  • 1 tsp. Italian seasoning
  • 1 tsp. coarse kosher salt
  • 1/2 tsp. pepper
  • 2 Tbsp. olive oil
  • 2 cups pizza sauce
  • 1 1/2 cups freshly shredded mozzarella cheese
  • 10-12 fresh basil leaves, julienned

Instructions

  • In a large bowl, combine your ground chicken, mayo, panko, Italian seasoning and salt and pepper. Mix all the ingredients gently together until well combined.
  • Form the mixture into four equal patties.
  • Heat your olive oil in a large skillet over medium-high heat. Once the oil is heated you will add your patties and cook for 3-4 minutes then flip the burgers and continue to cook for an additional 3-4 minutes or until the burgers are lightly browned and the internal temperature is 165 degrees F.
  • Top each burger evenly with the pizza sauce and then the shredded mozzarella cheese. Cover the skillet with a lid just until the sauce is warmed and the cheese is melted. Remove lid and top with julienned basil leaves. Serve with or without buns.

Notes

You can substitute the pizza sauce for marinara if you prefer or if you already have a jar of marinara in your pantry.
Freshly shred your mozzarella because it will melt a lot smoother than the bagged shredded cheeses.
I buy regular ground chicken for this recipe, not the 98% fat free.
