These Chewy White Chocolate Dipped Blueberry Granola Bars are a delicious on-the-go breakfast treat or the perfect little afternoon pick-me-up!

Life has been super busy around here lately! We’ve been taking care of and trying to train our new puppy Bodie and it’s proving to be more than I bargained for. Have you ever heard of a dog who doesn’t want to go for a walk? Well, that would be Bodie. We’re working on it, but he’s a stubborn little fellow.
He’s totally revamped our schedules. So workouts in the morning have been a bit shorter than usual or spaced throughout the day so we don’t leave the little guy alone for too long. Breakfasts have been more grab-and-go lately too.
Today, I’m sharing one of our favorite pre and/or post workout snacks. These Chewy White Chocolate Dipped Blueberry Granola Bars are absolutely delicious! They’re not only perfect for before or after a workout, they’re a tasty snack for when you hit that afternoon slump or a quick on-the-go breakfast bite when a sit down breakfast just isn’t going to happen.
Chewy White Chocolate Dipped Blueberry Granola Bar Ingredients
- old-fashioned oats
- sliced almonds
- unsweetened shredded coconut
- Cherrios
- cinnamon
- kosher salt
- maple syrup
- coconut oil
- unsulphered molasses
- light brown sugar
- vanilla extract
- dried blueberries
- white chocolate chips
- Crisco shortening
I’ve added sliced almonds, dried blueberries, unsweetened coconut and some Cherrios to the bars. And since we’ve all been so good with our New Year’s resolutions (right?!) I thought we deserved to dip them in some creamy white chocolate. If you haven’t been good (join the club), or just don’t want to add the chocolate, feel free to leave it out. I’ll let you be the judge, but don’t be too hard on yourself!
I make these in a 9×13 pan, but if you’d like your bars thicker just use a smaller pan. When they’re done baking, just remove them from the oven and let them stand for at least 3 hours so you can cut them into nice, neat bars.
Adults love these and so do the kids. They’re just what the kiddos need added to their school lunch boxes this week!

A Few Cook’s Notes for Chewy White Chocolate Dipped Blueberry Granola Bars
The white chocolate dip is totally optional guys. If you want to skip the calories by all means do. I enjoy it, but don’t sweat it if you want to omit it.
I used sliced almonds for this recipes, but they’d be delish with pecans or walnuts instead.

Chewy White Chocolate Dipped Blueberry Granola Bars

- 2 cups old-fashioned rolled oats
- 3/4 cup sliced almonds
- 1/2 cup unsweetened shredded coconut
- 1 1/2 cups Cheerios
- 1 tsp. ground cinnamon
- 1 tsp. kosher salt
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 3 Tbsp. unsulphured molasses
- 3 Tbsp. light brown sugar, lightly packed
- 1 tsp. vanilla
- 1 cup dried blueberries
- 1 1/2 cups white chocolate chips
- 2 Tbsp. Crisco shortening
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Combine oats, almonds and coconut in a large bowl. Spread onto baking sheet and toast in oven for 8-10 minutes until fragrant. Remove from oven and let cool. Add in Cheerios, cinnamon and salt.
- Reduce oven temperature to 300 degrees.
- Line a 9x13 pan with parchment paper. Lightly spray parchment with non-stick cooking spray.
- In a microwave safe bowl combine maple syrup, coconut oil and molasses. Microwave for about one minute . Remove from the microwave and mix with a spatula until all the ingredients are melted and smooth. Gently stir in the brown sugar and the vanilla. Pour over the oat mixture and mix until well moistened. Mix in blueberries.
- Pour mixture into prepared pan. Press mixture gently and evenly into pan. Bake for 30 minutes. Let cool in pan on wire rack for 3 hours. Cut into bars.
- Line a large baking sheet with wax paper or parchment paper.
- Place chocolate chips and shortening in a microwave safe bowl.
- Microwave in 30 second intervals, stirring in between, until melted and smooth.
- Dip bottom of each bar in melted chocolate and place on prepared sheet chocolate side down. Let chocolate set.
These granola bars look yummy! Reading the ingredients, I have everything on hand. I’m gonna making these for the weekend. Oh, and I’m with you on the airlines. We won’t go there though, my son is a crew member for one of them! Have a great weekend in the sunshine state! The temps here have been in the 80’s.

OMG… how about the amount of leg room getting smaller and smaller? Alaska offers a free snack pack on their flights and Hawaiin offers meals and snack – included. I’ve not flown other airlines in so long (save Virgin America once).. I really appreciate Alaska since I started flying with them years ago. I’m with ya on taking your own snacks anyway. I’m right with you Mary Ann. Whenever we travel abroad, bags of homemade granola and seed bars go into the luggage, especially when hungry teenagers are in tow. I LOVE these bars. What a great time of year to be visiting Florida. I hope the weather cooperates and you have a nice visit with your mom. I can’t imagine flying and not having access to water. . .especially if the airlines don’t allow you to carry on your own bottle. We generally fly Delta and fortunately they usually provide an in flight beverage. . .and snack. . .albeit a tiny packet of almonds.
Regardless, I agree that homemade snacks, such as these granola bars, are far better than you could get in the airport or in flight. You tell hubby that the space below the seat is reserved for these beauties. . not for undies and swimsuits. ????

Whoa! Traveling sounds like a major drag! No free water? Just pack me some beer and a box of these granola bars and I’ll forget all about the inconveniences while enjoying sunny Florida!

I would love these, I am wondering if you had any trouble with the dried blues becoming too hard with the baking, I know when I make granola, I have to add any dried fruit afterwards to avoid the fruit becoming rock hard. Thanks!
