I’ve been making this one for years and it’s one of our favorites for Taco Tuesdays and game day parties.

Ingredients You’ll Need
- refried beans
- picante sauce (mild, medium or hot depending or your preference)
- sour cream
- cheddar cheese
- pepper jack cheese (or regular monterey jack cheese)
- diced green chiles
- sour cream
- cream cheese
- chili powder
- ground cumin
Step-by-Step Instructions
Seriously, this recipe is so simple even Mr. Picky can whip it up in no time and not leave a huge mess behind when he’s done.
Just grab a large bowl, add all your ingredients and mix until well combined.
Transfer the mixture to a baking dish that’s been lightly sprayed with nonstick baking spray and bake uncovered for 20-25 minutes or until it’s bubbly around the edges.
Feel free to sprinkle the top with extra shredded cheese if you prefer.
You can also adapt this recipe to make it in your slow cooker. I have a mini slow cooker that I purchased at my local Hobby Lobby for under $15.00 and the dip fits in it perfectly and keeps it nice and warm throughout the whole game.
The added chili powder and ground cumin, as well as the chopped green chiles give this dip great flavor. And if you like things spicy feel free to use medium or hot picante sauce instead of mild.

A Few Cook’s Notes for Cheesy Bean Dip
You can opt to serve your dip with tortilla chips and/or fresh cut veggies.
I also love to serve this dip with a bowl of guacamole and some freshly made pico de gallo.
I use pepper jack cheese for my cheesy bean dip for extra spice, but you could substitute regular monterey jack cheese.

Cheesy Bean Dip

- 1 16-oz. can refried beans
- 1 cup picante sauce
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 3/4 cup sour cream
- 3 oz. cream cheese, softened
- 3 Tbsp. chopped green chiles
- 1 Tbsp., chili powder
- 1/2 tsp. ground cumin
- tortilla chips and/or sliced veggies, for serving
Instructions
- Preheat oven to 350 degrees. Spray a 2-quart baking dish with nonstick cooking spray. Set aside.
- Combine all ingredients in a large glass bowl and mix until well combined. Transfer mixture to prepared dish.
- Bake uncovered for 20-25 minutes or until the edges are bubbly. Serve with tortilla chips and or fresh veggies.
- If you opt to use a slow cooker, Transfer mixture to 1 1/2 quart slow cooker. Cover and cook on high for 2 hours, stirring occasionally.
