This Slow Cooker Chicken and Noodles is a healthy-ish slow cooker comfort food dish I serve often and it’s a total hit at our house. It’s the perfect dish for fall and winter. It’s a stick-to-your bones, satisfying meal that takes no time to prepare. Noodles, chicken, veggies and herbs all added to your slow cooker make for a tasty family dinner.

Since y’all abosultely LOVE my Slow Cooker Beef and Noodles, I just had to create a recipe with chicken. I can’t tell you how many views the beef recipe has gotten over the years here at the BHK, but it’s up there as one of my most popular recipes.
Clearly a slow cooker meal is always welcome. They’re easy to throw together and always so comforting, so this season I’ll be sharing a few, so keep your eyes peeled.
Ingredients You’ll Need
- boneless, skinless chicken thighs
- olive oil
- all-purpose flour
- coarse kosher salt
- black pepper
- yellow onion
- carrots
- celery
- garlic
- low-sodium chicken broth
- fresh thyme
- fresh rosemary
- egg noodles
- frozen peas
Step-By-Step Instructions
The first step will be to cut your chicken thighs into one to two-inch pieces and add to a medium-sized bowl. In a small bowl you’ll whisk together your flour, coarse kosher salt and pepper. You’ll pour the flour mixture over your cubed chicken and toss until all the chicken is well coated.
The second step will be to add your olive oil to your slow cooker over medium-high heat if your slow cooker has a saute function, if not add to a large skillet. Cook the chicken until lightly browned on all sides, about 4 minutes per side before removing from the slow cooker or skillet to a plate.
The third step will be to add your onions, carrots, celery and garlic to your slow cooker or skillet and cook over medium heat for 6-7 minutes, stirring often.
The fourth step will be to add your broth and chicken with any juices to the slow cooker. You’ll cover and cook on high for two hours. Don’t worry, I know it will look like a lot of liquid, but you’ll be cooking the noodles in it later in the recipe, so the noodles will soak up the liquid.
The fifth step will be to add your uncooked noodles, peas, fresh thyme and rosemary and mix until well combined. Turn the slow cooker temperature down to low and continue to cook for 30 minutes.
The noodles will be soft and the chicken will be fall apart tender. Before serving, I season with salt and pepper and then serve immediately in bowls.

A Few Cook’s Notes for Slow Cooker Chicken and Noodles
I add the frozen peas when I add in the noodles for the last 30 minutes so they don’t get too mushy.
Egg noodles work perfectly for this recipe. They cook right in the slow cooker in the broth, so you don’t cook them ahead of time.
