Today, I’m so excited to share these Watermelon Creamsicle Smoothie Bowls from my friend, Nicole (Coley) Gaffney’s new book, The Art of the Smoothie Bowl. Coley who was a Food Network star finalist is the founder of Soulberri Smoothies and Bowls in Brigantine, New Jersey, just a short ride from where I live in Avalon, New Jersey.

This Watermelon Smoothie Bowl is a sweet, refreshing combination of juicy, ripe watermelon, fresh orange juice and coconut milk ice cubes. It’s sort of a cross between a snow cone and an orange creamsicle as Coley describes it.
If you’re looking for a light afternoon snack on a hot summer day this smoothie bowl is the ticket. Enjoy!
A Few Cook’s Notes for Watermelon Creamsicle Smoothie Bowl Recipe:
I like to keep an entire tray of the coconut milk ice cubes in my freezer, so whenever I grab a fresh watermelon I already have frozen cubes at the ready.
The black sesame seeds give the appearance of black watermelon seeds and give the smoothie a bit of a crunchy bite, but they are optional.
Deliciously sweet and refreshing, this Watermelon Creamsicle Smoothie Bowl will bowl will be on repeat all summer long!
- 1/4 cup orange juice, plus extra if needed
- 2 1-oz. coconut milk ice cubes
- 2 cups frozen watermelon chunks, plus extra chunks or wedges for topping
- 1/2 tsp. black sesame seeds, for topping, if desired
Add orange juice, coconut milk ice cubes and frozen watermelon chunks to a blender and blend on high speed, stopping often to smash down all ingredients and scrape down the sides of the blender as needed. Blend until smooth, texture should be comparable to a sorbet. If needed, add one tablespoon of OJ at a time to help with blending, but remember, the mixture should be thick.
Transfer to a bowl, arranging watermelon chunks or wedge on top. Sprinkle with black sesame seeds. Serve immediately.
