Happy Monday guys! How was everyone’s weekend?
I’m a little tuckered out from my busy weekend, so today calls for one of my favorite Monday morning perk me ups! (see what I did there?) High on my list of favorite combinations is chocolate and coconut, second only to chocolate peanut butter. So this Chocolate Coconut Espresso Smoothie puts a smile on my face and a skip in my step. And today, I’m in desperate need of that little extra skip!
A flavorful combination of banana, cacao powder, espresso powder, cooled freshly brewed coffee, coconut milk, a pinch of cinnamon and some honey for sweetness makes for one delicious breakfast smoothie, post workout smoothie or afternoon pick me up. It’s ultra-creamy, decadent and tastes more like dessert! Topped with some chocolate shavings and toasted coconut chips and Monday’s looking better already! Enjoy!
- 1 frozen banana
- 1/2 cup coconut milk
- 1/2 cup freshly brewed coffee, cooled
- 2 tsp. unsweetened cacao powder
- 2 tsp. espresso powder
- 1 tsp. honey
- 1 tsp. vanilla extract
- 1/8 tsp. ground cinnamon
- shaved semisweet chocolate and toasted coconut chips for garnish
- Place all ingredients in a blender and process until smooth. Garnish with shaved semisweet chocolate and toasted coconut chips if desired.
