At the moment I’m savoring the beautiful warm summer days, so dinners have been quick and easy lately.
I don’t know about you guys, but I often grab a rotisserie chicken when I want to put in minimal effort into making dinner. I know, I’m a food blogger, but there are some days and nights that I’m a slacker. There I said it. #sorrynotsorry
After a while though a plain old rotisserie chicken just sliced up and served with a starch and veggie gets kinda boring. There are so many other ways to jazz it up, so here I am with some Rotisserie Chicken Tacos to the rescue!

The chicken mixture for these rotisserie chicken tacos uses minimal relatively inexpensive ingredients.
It’s perfect for your weekly meal prep and can be enjoyed in hard taco shells or soft tortillas. It can also be added to a bowl with some rice, refried beans and guac.
Ingredients You’ll Need
- olive oil
- yellow onion
- garlic
- shredded rotisserie chicken
- package taco seasoning
- low-sodium chicken broth
- Rotel Diced Tomatoes and Green Chiles
- flour tortillas
I buy a whole rotisserie chicken and take all the meat off the bones and then shred. You’ll need 4 cups of shredded chicken for this recipe. If you’re feeling super lazy, you can even just purchase already shredded chicken from your local market if they have it available.
Step-By-Step Instructions
The first step will be to cook your chopped yellow onion and garlic in your olive oil over medium heat, stirring often, until slightly softened and translucent.
The second step will be to add in your shredded chicken, taco seasoning, chicken broth and undrained Rotel tomatoes and green chiles and mix until well combined.
You’ll bring the mixture to a quick boil, then reduce the heat and simmer uncovered for 4-5 minutes until heated through.
I love to serve my tacos with either crumbled cotija cheese or shredded cheddar or monterey jack cheese, as well as some refried beans and guacamole. Sometimes I even add about 1/2 cup or so of whatever cheese I’m using right into the chicken mixture in my skillet and mix until it’s melted in.
I love making this rotisserie chicken taco mixture at the beginning of the week for meal prep and just eating some straight from the fridge to hit my protein goal for the day!
