Rotisserie Chicken Tacos
These Rotisserie Chicken Tacos are a ridiculously easy weeknight game changer! Grab yourself a store-bought rotisserie chicken, a packet of taco seasoning and just a few other ingredients and dinner is served! It's a 30-minute meal that couldn't be simpler!

- 2 Tbsp. olive oil
- 3/4 cup yellow onion, chopped
- 3 cloves garlic, finely minced
- 4 cups shredded rotisserie chicken
- 1 1-oz. package taco seasoning
- 1 10-oz. can Rotel tomatoes and green chiles, undrained
- 1/2 cup low-sodium chicken broth
- flour tortillas or hard shell tacos, for serving
- crumbled Cotija cheese, refried beans, guacamole, for serving
Add olive oil to a large skillet and heat over medium heat. Add your chopped yellow onion and garlic and cook, stirring often, until slightly softened and translucent, about 3-4 minutes.
Add your shredded chicken, taco seasoning, chicken broth and undrained Rotel tomatoes and green chiles to the skillet and mix until well combined. Bring the mixture to a quick boil, then reduce the heat and simmer uncovered for 4-5 minutes until heated through.
Serve in hard taco shells or flour tortills with either crumbled cotija cheese or shredded cheddar or monterey jack cheese, as well as some refried beans and guacamole.
