Rotisserie Chicken Tacos

These Rotisserie Chicken Tacos are a ridiculously easy weeknight game changer! Grab yourself a store-bought rotisserie chicken, a packet of taco seasoning and just a few other ingredients and dinner is served! It's a 30-minute meal that couldn't be simpler!

Ingredients

  • 2 Tbsp. olive oil
  • 3/4 cup yellow onion, chopped
  • 3 cloves garlic, finely minced
  • 4 cups shredded rotisserie chicken
  • 1 1-oz. package taco seasoning
  • 1 10-oz. can Rotel tomatoes and green chiles, undrained
  • 1/2 cup low-sodium chicken broth
  • flour tortillas or hard shell tacos, for serving
  • crumbled Cotija cheese, refried beans, guacamole, for serving

Instructions

  • Add olive oil to a large skillet and heat over medium heat. Add your chopped yellow onion and garlic and cook, stirring often, until slightly softened and translucent, about 3-4 minutes.
  • Add your shredded chicken, taco seasoning, chicken broth and undrained Rotel tomatoes and green chiles to the skillet and mix until well combined. Bring the mixture to a quick boil, then reduce the heat and simmer uncovered for 4-5 minutes until heated through.
  • Serve in hard taco shells or flour tortills with either crumbled cotija cheese or shredded cheddar or monterey jack cheese, as well as some refried beans and guacamole.
