Why should the kids have all the fun?! These Piña Colada Popsicles are a special boozy summer treat for all the adults at your next summer soirée! 

Piña Colada Popsicles

Today’s post is not a sponsored post. I just wanted to share my favorite summer Caribbean Rum with you guys, because it’s something I really enjoy and I think you will too. And when I had the chance to be a part of Popsicle Week, organized by Billy from Wit and Vinegar (thanks Billy!!), I wanted to share a boozy little treat that’s always a true hit with all the adults at the party.

Piña Colada Popsicles

One of my favorite summer cocktails has always been Malibu and pineapple juice. It just screams summah, and it’s incredibly refreshing! I mean who can resist the winning combo of sweet pineapple and tropical coconut? Surely not me! And clearly you all like it too! My recipe for Chocolate Dipped Pineapple Slices with Toasted Coconut from a Simple Saturday way back was a HUGE hit!

So turning my favorite cocktail into a popsicle seemed like a great idea! And dipping them in chocolate and sprinkling them with toasted coconut chips…even better!! These are perfect for the 4th! Enjoy!

Servings: 8 -10 popsicles

Ingredients
  • 2 cups fresh pineapple cubed
  • 2 cups coconut milk
  • 1/2 cup granulated sugar
  • 1/2 cup Malibu rum
  • Chocolate Dip:
  • 1 cup dark chocolate chips
  • 2 Tbsp. coconut oil
  • toasted coconut chips for garnish
Instructions
  1. To a blender, add pineapple, coconut milk, sugar, and rum. Puree until smooth.
  2. Pour mixture into molds. Insert sticks. Freeze until solid, about 6 hours.
  3. For the chocolate dip: Combine the chocolate chips and oil in a microwave-safe bowl. Microwave in 20 second intervals until melted and smooth. Cool slightly before dipping.
  4. Line a large baking sheet with parchment paper and set aside.
  5. To unmold the popsicles, run some hot water over the outsides of the molds, then pull to release the popsicles. Dip the top of each popsicle in melted chocolate and place on prepared sheet. Sprinkle with toasted coconut chips. Place tray in freezer until chocolate hardens.
  6. The amount of popsicles will depend on the size of your molds.

        I think I would make these for a party but probably end up having to double the recipe, because I’d eat an entire batch! I love pina coladas!! This would be such a fun treat for adults after a bbq. Loving this!! Yay popsicle week! :)

    I absolutely LOVE having pops on hand when the temps start going up. Sharing them is SO fun too! I mean, who doesn’t love to be given a popsicle on a hot summer day (especially boozy)!!?     These look absolutely positively delicious Mary Ann. I used to drink Malibu rum when I was a wee bit younger. . .but have since been enjoying tequila or vodka-based drinks. These beauties are reminding me that I shouldn’t forget about my old friend Malibu. That said, I think I would much rather enjoy them in these divine popsicles versus a same ol’ same ol’ cocktail.

    Hi, is that 1/2 cup of sugar? Or some other measurement? Also, are you using coconut milk that comes in cans or the new type that is in a box in the chilled section? Ta.

Pound cakes are super simple, don’t create a huge mess in your kitchen and require only a handful of ingredients. They can be served plain, glazed, with ice cream or fresh whipped cream and seasonal berries. ⁣

This African Peanut Sweet Potato Stew is loaded with sweet potatoes, onion, red bell pepper and garlic and it’s just bursting with flavor! It’s got some ginger, cumin, brown sugar for sweetness and cayenne for some added heat. Topped with some peanuts and crusty homemade croutons for added crunch and this one’s sure to be a crowd favorite.⁣
