Step up your toast game with this yummy Garden Vegetable Toast with Herbed Feta Spread! It’s the perfect indulgent snack, savory lunch or light dinner!

Garden Vegetable Toast with Herbed Feta Spread

I’m steppin’ up my toast game today friends. Most of the time, I just throw a slice in the toaster for a quick breakfast…but not today! Today, I’m gettin’ fancy.

Garden Vegetable Toast with Herbed Feta Spread

That’s what’s great about toast. It’s so versatile. It’s not just for breakfast anymore. You can get creative and turn a simple slice into something savory and delicious in a matter of minutes with only a handful of ingredients.

Today’s upgrade starts with a nice, thick and hearty slice of toasted pumpernickel. I topped it with a mixture of whipped cream cheese, feta crumbles, sour cream, and fresh dill. Then to make sure I get in my daily dose of veggies, I sliced up some English cucumber, radishes and red onion. A little sprinkle of kosher salt, pepper and some extra dill and BINGO! Boring old breakfast toast is now upgraded to a savory lunch, indulgent afternoon snack or even a simple light dinner.

Servings: 2 -3 slices

Ingredients
  • 2-3 slices pumpernickel bread
  • 2 oz. cream cheese softened
  • 4 oz. feta cheese crumbles
  • 1/4 cup sour cream
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 2 Tbsp. fresh dill minced, plus extra for sprinkling on top
  • Toppings:
  • a few slices of English cucumber a few sliced radishes, a few thin slices of red onion
  • kosher salt and pepper to taste
Instructions
  1. Toast pieces of pumpernickel.
  2. Whisk together cream cheese, feta, sour cream, kosher salt and pepper until smooth. Fold in 2 Tbsp. dill.
  3. Spread mixture on top of toast slices.
  4. Top with slices of cucumber, radishes and red onion. Sprinkle with kosher salt, pepper and extra dill.

    Love this Mary Ann!! Get on with your fancy self ;) This is almost too nice for brekky. But, I’d be really happy if I did have! I’d even be satisfied with this for dinner with some vino, of course :) Looking forward to trying soon!

    Fancy pants toast! Love it, Mary Ann- Super simple, but packed with flavor! That cream cheese mixture sounds delicious! I’m going to make this for lunch but add a few slices of gravlax for protein.. and because I happen to have some hanging out in the frige. ;) Delicious! Cheers friend- to a wonderful weekend!

    OK this looks like an extremely delicious version of the Scandanavian smorebrod. We went to Denmark/Norway apparently a specialty is to serve these little slices of rye bread with any number of toppings, but dill and cucumber definitely made an appearance! Not going to lie, your’s looks MUCH better and that pumpernickel bread looks like something I could eat all day long :)

    That spread, Mary Ann, it’s divine! Atop pumpernickle? I’ve not had that in forever and I absolutely love it. Rob, on the other hand, does not. Perhaps this is why I’ve not bought it in so long. We go through bread pretty slow around here, so I’ll have to freeze most of it. I’ll be picking some up! I love toast so much and well, anything that one can put on bread. I like how you step up your toast game! Looking forward to more!

    Yesssss! I love me some fancy pants toast. I also love me some dill (I bet you didn’t know that ;-). And you created this masterpiece with pumpernickel bread no less. It’s been eons since I had that bread. . .my grandma used to always have a loaf of it in her kitchen.
