I’ll be stocking up the fridge, the snack cabinet will be bursting, I’ll be doing wash until the cows come home, picking up dirty socks off the floor, turning off the TV at 3:00 in the morning (that someone fell asleep watching), and cooking and baking up all kinds of goodies! Like I said….SERIOUSLY, I can’t wait!
It’s almost SPRING BREAK!
My son Casey will be heading home from University of Michigan which means I will spend the next 12 days lining up some of his favorites! He says he has been missing my home cooking (I love that kid!) and that he has been so busy working hard and studying he has been skipping meals left and right! I know, sounds fishy to me too but that’s his story and he’s sticking to it.
Casey loves his chocolate and brownies are at the top of his list, so I have been trying to step up my game in the brownie department! I think he is gonna love this one….a S’mores Brownie. No wait…did I say “think”? I KNOW he is gonna LOVE this one! A perfectly buttery graham cracker crust, topped with a sweet, rich, thick, fudgy brownie and finished off with toasted marshmallow! Sound good to you? These brownies are sinfully decadent. I am NOT kidding. They are the ultimate chewy brownie treat. I am pretty sure you won’t be able to eat just one! I guarantee you will DEFINITELY want s’more! (Sorry, I couldn’t resist!)
Ingredients
- 2 cups semisweet chocolate chips
- 1 cup butter
- 1/2 cup light brown sugar packed
- 1 1/2 cups granulated sugar
- 4 large eggs room temperature, lightly beaten
- 2 tsp. vanilla
- 2 1/2 cups all-purpose flour
- Graham Cracker Crust:
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 Tbsp. butter melted
- 1/4 tsp. ground cinnamon
- Marshmallow Topping:
- 8 oz. Marshmallow Fluff or as much as you would like
Instructions
- Preheat oven to 350 degrees. Line a 9x9 inch baking pan with foil making sure the edges of the foil hang over the sides of the pan so it will be easy to take the brownies out when they are done cooling. Spray bottom and sides of the foil lightly with no-stick cooking spray.
- Graham cracker crust directions: Combine graham cracker crust ingredients in a medium bowl and mix with a fork until well combined. Press the mixture into the bottom of the prepared foil lined pan. Bake for 10 minutes. Remove from oven to wire rack.
- Brownie directions: Melt the chocolate chips and butter in a double boiler over medium heat until smooth. You can also melt in the microwave in 20 second intervals at a time stirring in between until smooth. Let mixture cool for 5 -7 minutes then add the brown sugar, granulated sugar, eggs and vanilla and mix until smooth. Carefully fold the flour into the chocolate mixture all at once. Fold it in nice and slow making sure not to over mix. Stop mixing as soon as you no longer see the white of the flour. Pour the brownie mixture on top of the graham cracker crust and bake at 350 degrees for 42 minutes. The brownies will continue to cook when you take them out of the oven so do not over bake if you want to have a perfect fudge-like brownie. Remove from the oven and place on wire rack. Let brownies cool slightly and while still warm top with the marshmallow Fluff.
- Marshmallow directions: The marshmallow layer is totally up to you. I used about half of a 16 ounce container of marshmallow Fluff. Using a rubber spatula carefully spread the Fluff over the warm brownies in a nice even layer. I microwaved my container of Fluff for a few seconds to make the Fluff softer and easier to spread. Place the pan under the broiler for one minute or until lightly browned. Do not place too close to the broiler because you don't want the marshmallow to get too dark.
- Let the brownies cool for at least an hour before trying to lift from the pan. Cut into squares.
- *Make sure the tinfoil is folded down on the sides of the pan so it does not catch fire when you are broiling the marshmallow topping. Watch the pan for the entire time at this point because the marshmallow topping will brown rather quickly.

First of all your S’mores brownies look amazing and obviously i want to bake them myself but i have a 13 x 9″ pan. In this case should i duplicate the recipe and the cooking time or how should i proceed?

Thank you very much. I tested this recipe in a 9×9 pan. If you want to use a 13×9 the brownies will not be as thick and I would reduce the cooking time to 30 minutes at 350 degrees. You may also want to increase the graham cracker crust ingredients to 3 cups graham cracker crumbs, 1/4 plus 2 Tbsp. granulated sugar, 9 Tbsp. melted butter and about 1/2 tsp. ground cinnamon so your crust will fill the pan. I would also use more fluff for the topping.
Just a heads up these brownies freeze really well too. I froze a couple and popped one out of the freezer the other night for my husband put it on a piece of tinfoil and placed it on a baking tray in a 325 degree oven for about 15 minutes or so. I did not seal the tinfoil on top of the brownie I just tented it a little. We were fighting over the last bite!

He LOVED them!! They freeze really well too! Just save some extra (if you can) and put in a Ziploc freezer bag and when you’re craving one just pop it out of the freezer and put it in the oven to warm it up! Such a great decadent treat! Enjoy and thanks for following!

Yes Linda, I mention in the recipe you can microwave the Fluff for a few seconds in the microwave so it is easier to spread with the rubber spatula. It’s 1 1/2 cups granulated sugar and 1/2 cup light brown sugar. I hope it’s ok!!

Yes you may. Put as many marshmallows as you’d like on top and then place under broiler. Be careful because they will brown very quickly. These brownies are very rich and best eaten in small squares. They also freeze really well! Enjoy!

Hi Jodi. They will last at room temp in a sealed airtight container for up to 2 days, but I always cut mine in squares and freeze and they are still fabulous. I take one out of the freezer wrap it in foil and just leave the top of the foil somewhat open. I bake at 325 degrees for about 15-20 minutes until heated through. They’re so good and just hit the spot when I’m craving a little chocolate! Enjoy!

How many people does it serve?

Hi Gretchen. This recipe makes one 9×9 pan. You can cut them into 9 equal squares so there would be nine servings, but these are very rich, so eating a 3×3 square is a lot! I like to cut mine in smaller squares, so most of the time I cut them into 12 squares.

Made these today for my daughter’s birthday but used a graham cracker crust instead. The crust ended up overcooked (oops!) but the brownies were amazing! Next time I’d probably cut down on the sugar just a little but but everyone enjoyed them.
