What could be more fun than a cookie loaded with sprinkles? These Chewy Brown Sugar Funfetti Cookies are all that and a bowl of sprinkles! Crisp and chewy and super easy to make!
I think our weekend needs a batch of these Chewy Brown Sugar Funfetti Cookies! Who’s in?
I hear snow is on the way in some places, so I bet school cancellations are happening. So, that calls for a special treat for the kiddos since they’ll be out shoveling snow for dear old Mom and Dad, right?
I know I’ve mentioned that my mother was not a baker. I think the one memorable Christmas when she whipped up a batch of my great Aunt Ag’s Anise Seed Sugar Cookies was totally out of character, but were they so delicious!
When we shoveled snow, Mom always made a huge pot of buttered noddles for us when we came in. I’m not gonna lie, just as good as cookies in my opinion.
Why You’ll Love this Recipe
I love these cookies, because I always have all the ingredients on hand and I bet you do too. If you don’t have the sprinkles, you really do need to have them stashed in your pantry at all times, not just for cookies, but for unexpected late night ice cream situations.
This dough takes minutes to prepare and there is no chilling time required.
They’re crisp on the outside and chewy on the inside and stand up to a dunk in a glass of cold milk.
Ingredients You’ll Need
- all-purpose flour
- baking soda
- salt
- unsalted butter
- light brown sugar
- large egg
- vanilla extract
- sprinkles
Step-By-Step Instructions
The first step is to add your flour, baking soda and salt in a medium bowl and whisk together.
The second step is to combine your butter and brown sugar and mix until smooth and creamy, about 2 minutes, followed by your egg and vanilla extract.
The third step is to add your flour mixture and mix until just combined. Once combined, you’ll fold in your sprinkles.
The last step is to use a 1 1/2-inch cookie scoop and then drop cookie dough onto your prepared sheets, 2 inches apart. You’ll bake for 11-12 minutes. Remove from oven and cool on wire racks.
These are delicious served with a cold glass of milk for dunking. They also freeze well, so if by chance you have extra just add to a freezer bag or airtight container and freeze until a craving hits.

A Few Cook’s Notes for Chewy Brown Sugar Funfetti Cookies
Fold in your sprinkles gently so you don’t crush them.
Sometimes I like to make the cookie dough, scoop into balls and freeze on a tray and then add to a freezer bag to bake at a later day. If you decide to do that, you’ll need to add a minute or two to the baking time.
