During the summer we try to maximize our time outside, so dinners need to be quick and easy for the most part. This Cheesy Garlic and Herb Chicken with Orzo is one of those dinner recipes. It’s a dump-and-bake, one-dish wonder my whole family loves.
We love Alouette cheese at our house, so we don’t only enjoy it on our cheeseboards, I try to incorporate it into recipes whenever I can. It’s velvety smooth and comes in some tasty flavor combinations. I chose garlic and herb for today’s recipe.

I love the combination of ingredients in this dish. Moist, juicy chicken and loads of veggies. Onions, garlic, tomatoes, red peppers and spinach, with one of my favorite pastas, orzo. The alouette cheese melts so smoothly and gives this comfort food pasta dish such great flavor.

Ingredients You’ll Need
- olive oil
- boneless, skinless chicken thighs
- coarse salt and pepper
- garlic powder
- onion powder
- Italian seasoning
- yellow onion
- garlic
- jarred roasted red peppers
- petite diced tomatoes
- orzo pasta
- low-sodium chicken broth
- alouette cheese
- baby spinach leaves
Step-By-Step Instructions

The first step will be to season your chicken with your spices. You’ll place your chicken in a large bowl and toss with your olive oil. Then you’ll combine your kosher salt, pepper, garlic and onion powders and Italian seasoning in a small bowl and mix together until well combined. Sprinkle the spice mixture over your chicken and mix until the chicken pieces are well coated.

The second step will be to add your coated chicken pieces to a 9×13-inch baking dish followed by your chopped onion, garlic, roasted red peppers and tomatoes.

The third step is to add in your dry orzo pasta and low-sodium chicken broth. You will mix everything together with a rubber spatula.

The fourth step will be to dollop the alouette cheese on top of the chicken/pasta mixture.

You will cover the dish with foil and bake in the oven for 35 minutes at 400 degrees. Then you’ll remove the dish from the oven and mix in your spinach leaves and then place back in the oven for 5 minutes.


Once it’s done baking, remove the dish from the oven and let it stand for 5-10 minutes to thicken up before serving.
This is a comfort food dish with so much flavor, protein and your daily dose and veggies. You’re going to love how easy it is to throw together too!

I used canned petite diced tomatoes for this recipe, but you can use regular sized canned diced tomatoes as well.

- 2 cups spinach leaves, rinsed, stems removed and julienned
Instructions
- Preheat oven to 400 degrees.
- Season your chicken with your spices. You'll place your chicken in a large bowl and toss with your olive oil.
