Ingredients

  • 1 3/4 lb. boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 Tbsp. olive oil
  • 2 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. coarse kosher salt
  • 1/2 tsp. pepper
  • 1 cup yellow onion, chopped
  • 1 14.5-oz. can petite diced tomatoes, drained
  • 1 cup jarred roasted red peppers, chopped
  • 4 cloves garlic, minced
  • 1 1/2 cups dry orzo pasta
  • 2 1/2 cups low-sodium chicken broth
  • 1 6.5-oz. conatiner Garlic and Herb Alouette Cheese
  • 2 cups spinach leaves, rinsed, stems removed and julienned

Instructions

  • Preheat oven to 400 degrees.
  • Season your chicken with your spices. You'll place your chicken in a large bowl and toss with your olive oil. Then you'll combine your kosher salt, pepper, garlic and onion powders and Italian seasoning in a small bowl and mix together until well combined. Sprinkle the spice mixture over your chicken and mix until the chicken pieces are well coated.
  • Add your coated chicken pieces to a 9x13-inch baking dish followed by your chopped onion, garlic, roasted red peppers and tomatoes.
  • Add in your dry orzo pasta and low-sodium chicken broth. You will mix everything together with a rubber spatula. Dollop the alouette cheese on top of the chicken/pasta mixture.
  • Cover the dish with foil and bake in the oven for 40 minutes at 400 degrees. Then you'll remove the dish from the oven and mix in your spinach leaves and then place back in the oven for 5 minutes.
    Once it's done baking, remove the dish from the oven and let it stand for 5-10 minutes to thicken up before serving.
