Up the ante for milkshake season with this rich and creamy Boozy Coffee Milkshake! It always hits the spot!
Tomorrow, we’re off to a celebration! Our son Casey will be joining his fellow classmates at The Big House at the University of Michigan in Ann Arbor for the Class of 2018 Graduation ceremony! Woot Woot! So in honor of Casey, today we’re celebrating with a Boozy Coffee Milkshake, one of his favorites!
It may sound cliché, but honestly it seems like yesterday that we drove to UMich, our family car packed to the brim, Kleenex in hand, for the beginning of our son Casey’s college adventure!
I can remember every detail of that day. It was beautifully sunny, close to 90 degrees, and with every box we unloaded I could feel the lump in my throat getting bigger and the tears in my eyes starting to stream down my face.
You think I’d be used to this, since early on Casey has always been fiercely independent. In fact, I remember vividly the first day of kindergarten. All the kids lined up, ready to walk into the school building, all the moms back behind the line chatting, and Casey turns around, locks eyes with mine and waves, buh-bye Mom. To be accurate, it was more like shooo, time to make your exit Mom, I’ve got this! I kid you not. This was kindergarten. He was six… going on sixteen!
Casey has never been afraid of hard work or a challenge, or a debate. He thrives on it. Talk about a kid who is driven. He’ll be graduating with a degree in Philosophy, Political Science and Economics with a minor in Chinese, which he has studied all through high school and college.
And in addition to all the hard work he’s put in at UMich, he’s always made sure of balancing it out with all the fun UMich had to offer! Football games, keg parties (one of my favorite pics all time of college life ↓), and lots of cross country trips during his summer vacations!
So today, I’m celebrating with one of Casey’s favorites, this Boozy Coffee Milkshake. A simple concoction of coffee ice cream, chocolate sauce, milk, a shot of Kahlúa and espresso and topped with some crushed chocolate covered espresso beans. It makes for the perfect, easy ice cream treat to enjoy all summer long!
As parents, we couldn’t be prouder and we’re so excited to see what Casey will contribute to this world, because he’s one kid who will not just take, but will make sure he gives back!

Boozy Coffee Milkshake

- 3 scoops coffee ice cream
- 1/2 cup milk
- 2 Tbsp. chocolate sauce
- 1 shot espresso, cooled
- 1 oz. Kahlua
- chocolate covered espresso beans, crushed
Instructions
- Combine ice cream, milk, chocolate sauce, espresso and Kahlua in a blender. Process until smooth, adding a bit more milk if needed to get to desired consistency. Add to a tall glass and top with chopped chocolate covered espresso beans.
