Yesterday was just one of those days. You know, the kind when you think your brain could just burst. Have you guys ever had one of those days? So much info to process, lots of it useless, yet I still try to pack more in for the day. I must be getting old! UGH!
All I can say is thank the good Lord for Post-It Notes! I think I solely keep 3M in business with my Post-It habit. I honestly don’t know what I’d do without them! I’ve got Post-Its everywhere. Sometimes though I have a hard time deciphering what I’ve written on them because I’ve got so many and use them to write down all kinds of information. I’ve got ones with recipes I want to make on them, ingredient lists, shopping lists, back to school lists, reminders to pay bills, reminders to call friends on their birthdays, and the list goes on! It’s crazy!
You are probably thinking, “Is there a point to this conversation? ” Yes, the point is, I found one of these notes the other day that was a reminder that I needed to include another delicious fruity cocktail on the blog before summer’s end! Thank goodness I found the note because we all know it’s 10 days to Labor Day! Perfect timing because after my day yesterday I could really use a tasty cocktail. I just bought some gorgeous blackberries and some fabulously fragrant mint at an awesome local fruit stand and thought BINGO….the perfect fixins’ for a luscious Blackberry Mojito! Mojitos are one of my favorite summer drinks. Traditionally, a mojito contains 5 ingredients: white rum, simple syrup, lime juice, club soda and mint.
So easy, and such a great way to use some of the beautiful fruits summer still has to offer! Enjoy, have an awesome weekend, and as usual, thanks for following! Cheers!
Ingredients
- 3 large blackberries
- 4-5 mint leaves
- 2 Tbsp. simple syrup*
- 1/2 lime juiced
- 2 oz. white rum
- 3 oz. club soda
- ice for servings
- extra blackberry and mint leaves for garnish
- *simple syrup ingredients
- 1 cup water
- 1 cup sugar
Instructions
- Place the blackberries, mint leaves and simple syrup in a cocktail shaker and muddle with a cocktail muddler.
- Add the lime juice and the rum.
- Fill the shaker with ice.
- Shake and strain into a glass filled with ice.
- Top with the club soda.
- Garnish with extra blackberry and mint leaves.
- For the simple syrup, in a small saucepan, boil sugar and water over medium high heat until sugar dissolves.
- Remove from heat and let cool.

So are you saying I am getting old too? Because I have post it notes EVERYWHERE- tucked into every crevasse of every handbag, on my nightstand, in the top drawer of my nightstand, on my office desk, stuck to walls in my office, in the kitchen… I’d probably even find some in my sock drawer. Ha! We have the same problem except mine is notebooks. I have 3 or 4 that have shopping lists, coffee shops to visit, blog ideas, and random recipes. I should probably be more organized :) Good thing you found that post-it because this drink looks amazing! The perfect way to end summer.

I’m getting old too… between post it notes and anniversaries, well, I GET it, Mary Ann!! When post it notes go in the fridge and pantry… well, you know it’s gettin bad! Having one of these blackberry mojitos will make it all better though, so I’ll just grab some berries off the bramble out back and mint from my Neighbor’s garden and whip this up!
