Where are all my summer strawberry fans?? Get ready, because today I’m serving a Strawberry Buckle. It’s a summertime classic that takes no time to make and is always a crowd favorite, especially served warm and topped with fresh whipped cream or vanilla ice cream.
A crisp, a cobbler, a crumble, a buckle…all super simple delicious desserts that are absolutely perfect for all that summer has to offer!

What is a buckle?
A buckle is a single layer cake that’s baked with berries and a crumbly topping. There’s more batter in a buckle compared to a crisp, cobbler or crumble.
Ingredients You’ll Need
- all-purpose flour
- baking powder
- kosher salt
- cinnamon
- granulated sugar
- light brown sugar
- unsalted butter
- eggs
- vanilla extract
- milk
- strawberries
Step-By-Step Instructions
The first step is to make your streusel. You’ll combine all your streusel ingredients and mix with a fork until well combined and crumbly and then set aside.
The second step is to whisk together your flour, baking powder, salt and cinnamon, then set aside.
The third step is to beat your butter and sugar on medium speed until light and fluffy, about 3 minutes. Add the eggs and vanilla and mix on low speed until well combined. Add half the flour mixture until just combined, followed by the milk and then the remaining flour mixture. Do not overmix. Fold in half or just a little over half of the strawberries. Pour the batter into your prepared pan then top with the remaining strawberries. Sprinkle the streusel over the fruit.
You’ll bake until lightly browned and until a tester inserted in center of cake comes out mostly clean, about 45 minutes. Transfer to wire rack and let cool for 5-10 minutes.
I like to serve my buckle warm with freshly whipped cream, vanilla ice cream or dusted with confectioners’ sugar.

A Few Cook’s Notes for Strawberry Buckle
I like to mix in about 1- 1 1/2 cups of the fruit into the batter and save the rest for the top of the batter before I sprinkle on the crumb.
You can use a round cake pan, a springform pan or a baking dish for this recipe. I used a 10-inch size baking dish.
I love to serve my buckle warm with some fresh whipped cream or with vanilla ice cream.

Cake Ingredients

Streusel Topping
- 1/4 cup unsalted butter, melted and cooled
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar, firmly packed
- 1/3 cup all-purpose flour
- 1 tsp. cinnamon
- 1/4 tsp. kosher salt

- Preheat oven to 350 degrees. Spray a 10-inch baking pan or springform pan with nonstick cooking spray. Set aside.

Yes, I usually cut mine into slices and freeze in a Ziploc bag, then when I want to enjoy a slice I just defrost to room temp and serve. So happy you enjoyed it Jes!
