Today’s Buffalo Chickpea Salad is one of my favorite easy recipes for my weekly meal prep! I absolutely LOVE all the crunch of this salad!

It take 20 minutes from start to finish, so it couldn’t be easier.
I don’t know about you guys, but I love anything with buffalo sauce and I have to say Frank’s has always been my favorite. This is not a sponsored post, I just wanted to share what I enjoy.
Ingredients You’ll Need
- canned chickpeas
- celery
- carrots
- yellow onion
- mayonnaise
- ranch dressing
- Frank’s Red Hot Wings Buffalo Sauce
- salt and pepper
Step-By-Step Instructions
The first step is to add your drained and rinsed chickpeas to a large bowl and slightly smash with a fork or potato masher.
Once the chickpeas are slightly smashed, you’ll add your chopped celery, carrots and onion.
The second step is to toss everything together and then add your mayonnaise, ranch dressing and buffalo sauce.
The third step is to mix everything until well combined, adding more buffalo sauce, if desired, and salt and pepper to taste.
I enjoy this salad straight from the container in the fridge or as a sandwich on some toasted fresh sourdough or multigrain bread.
It’s also delicious serve with pita chips for scooping. I always serve this salad with extra buffalo sauce on the side for those who like things spicier.

A Few Cook’s Notes for Buffalo Chickpea Salad
You can mash your chickpeas as much as you’d like. I like my salad chunkier with a bunch of whole chickpeas still in the mix.
Add as much of the buffalo sauce as you prefer. I usually go with four tablespoons.
