Buffalo Chickpea Salad

This Buffalo Chickpea Salad is loaded with chickpeas, fresh shredded carrots, onion, and celery and it's crunch-a-licious! It's so easy to make and a tasty healthy option for your weekly meal prep!

Ingredients

  • 2 15.5-oz. cans chickpeas, drained and rinsed
  • 1/2 cup chopped celery
  • 1/2 cup grated carrots
  • 1/4 cup finely chopped yellow onion
  • 3 Tbsp. mayonnaise
  • 2 Tbsp. ranch dressing
  • 3-4 Tbsp. Frank's Red Hot Buffalo Sauce
  • salt and pepper, to taste

Instructions

  • Add your drained and rinsed chickpeas to a large bowl and slightly smash with a fork or potato masher. Add your chopped celery, shredded carrots and onion. Add your mayonnaise, ranch dressing and buffalo sauce and mix everything until well combined. Add extra buffalo sauce, if desired, and season with salt and pepper.

Notes

You can mash your chickpeas as much as you'd like. I like my salad chunkier with a bunch of whole chickpeas still in the mix.
Add as much of the buffalo sauce as you prefer. I usually go with four tablespoons.
