These Stuffed Tomatoes are a spin on the classic wedge salad with tomatoes as the star of the show!

Good morning guys! Just popping in for a quick installment of Simple Saturday!

These Stuffed Tomatoes are usually a summer staple at the BHK, but since some of you live where it feels more like summer AND since I found some gorgeous tomatoes at the market last week, I had a craving for these beauties!

Stuffed Tomatoes

These are easy peasy lemon squeezy folks and absolutely delicious! I have always been a fan of the wedge salad, but I’m an even bigger fan of juicy, red tomatoes! So why not make the classic wedge salad with the tomato as star of the show?!

Just cut your tomato into wedges and load it with all the traditional ingredients…bacon, iceberg lettuce and blue cheese. No major instructions with this one. You simply add as much shredded lettuce, bacon and blue cheese that floats your boat!

Just keepin’ it SIMPLE folks! Enjoy and Happy Saturday!

Servings: 1 stuffed tomato

Ingredients
  

  • 1 medium tomato
  • shredded iceberg lettuce
  • crisp crumbled bacon
  • blue cheese dressing
  • blue cheese crumbles
  • salt and freshly ground black pepper

Instructions
 

  • Cut the tomato in wedges leaving it attached at the base of the tomato.
  • Add the lettuce, bacon and blue cheese dressing.
  • Top wirth with blue cheese crumbles and sprinkle with salt and freshly ground black pepper.
